    Gary,here’s a good question.How do you handle decanting a wine to a byob,which is very prevelant here in the Short Hills area?I have started to open a bottle in my cellar 2-3 hours prior to dinning,then re-corking it.What are your thoughts?

    Hi – very interesting to see you taste the port. For those of us who can’t afford vintage, how do the LBVs stand up, particularly the “traditional” (ie, non-filtered) ones. WL carries the noval (currently ‘99); Warre is also good, I think.

    I agree with you about Chardonnay – it has tended to become bland and it seems difficult to get those big, fat-tasting, barrel fermented chards that were once so common. Friends of mine in London have a saying when you ask them if they’d like wine.. “ABC” – anything but chardonnay. I guess this shows how easy it is to get bland stuff and pay too much for it.

    Gary,

    I wantched an old WLTV episode where you commented on a wine that was what you were drinking at home, “your go to white wine” at the time. I think it would be interesting for you to say from time to time what is in your everyday wine stash, what are your current “go to” every day whites and reds.

    Have you ever had The Prisoner from Orin Swift. I would love for you to try it some time on WLTV.

    Just started to watch WL TV and im hooked. Great education. I watched 15 episodes yesterday trying to catch up. Keep it up. As a suggestion for a future show could you do a tasting of white loire wines. Tasting the 4 major whites might be interesting (sancere,puilly fuise, savennierre, vouvray), or a comparison of wines from the same grape . I think that Loire wines are an incredible bargain compaired to white burgandy or calif chard. Anyway, keep it up. bob

    I have been working too much and then my damn computer’s power supply went to hell! Now that I have a computer that is running in spread out parts I try to leave it off as much as possible…making me late to view the WLTV episodes…
    As far as the wine storage unit goes…I too am busting at the seams and have been looking for another unit. I have found some that do not use moving parts to eliminate vibration and noise but the outside temp increases quite a bit.
    My question is…how critical is it for the wine storage unit to not vibrate? Will the slight vibrations from a condensor and fan harm the wine?
    Someone please shed some light on this for me…
    As for my alternative…I am looking into renting a conditioned storage place and purchasing the best and largest wine storage unit available and renting the extra space to some clients and friends of mine that have a similar problem. Problem solved for me and them…and I break even on my upfront costs after about a year…then I profit. Aaahhhh easy money :)

    As far as wine units, check out costco.com…excellent prices on Vinotemps including shipping which will save you alot.

    Still waiting for an entire episode dedicated to port…

    Brandon, just remember that refrigerators, freezers, and wine storage units are most energy efficient when full. Git ‘er done.

    Hey Gary,
    Wanted to know your thoughts South African wines?
    2005 Nitida Sauvignon Blanc, Durbanville, SA.
    2004 Warwick, Pinotage, Stellenbosch, SA.
    I really enjoyed these but found it a bit difficult to find others.
    I was very excited about this Pinotage as well,
    fruit forward with a smokey finish.

    Brandon: When one has budgetary concerns or is pathologically frugal, spending a few hours assembling a wine storage unit may not seem so bad. I bought a 200 bottle Koolspace unit through IWA Wine a couple of years ago. I waited util they had both a sale and free shipping and got the thing for about $800. No complaints so far, but size does matter. I filled it in no time and began stacking the overflow in the corner of the basement just like before I had the unit. Go as big as you have room and $$ for.

    Gary – Great episode … thanks. I am going to try to find some Match to try/buy. I am also excited about all the 03 port I bought. As you would figure, I have not tried any yet.

    Brandon – I agree with Joe … if you love wine, buy at as much capacity as you can fit/afford. I built a cellar six years ago with a capacity of nearly 2,000. I thought I would never, ever fill it … I just added three more racks.

    I just went through the wine fridge research thing and after much comparing and message board advice, I went with the EuroCave Comfort that supposedly holds 260 bottles, and love it. Of course it will only hold 260 if every bottle is the standard Bordeaux style, so hopefully you don’t like Pinot, Riesling, or Port.

    There are cheaper units available, but they’re never rated as good and after reading fine print some you actually have to assemble yourself. Come now.

    Check out Wine Enthusiast website–they usually have deals going on.

    Remember, it’s all about temp, humidity, and vibration control.

    Did someone really say Snakes would bring in $63MM this weekend???? Did you mean $63,000?

    Douglas – My tastes definitely change with the seasons, more reds in the winter, more whites in the summer. When I first took a wine appreciation class in college, we stuck with the big 6 my prof picked. I stuck with those a while, but now I crazy adventurous and will literally try anything…

    Jason R – Chocolate is one of the best things to pair with wine. If you really want to be blown away, pair it with a nice port. One of my favorite pairings is a chocolate flourless cake topped with raspberries and port.

    ?s for Gary and anyone else who wants to jump in: do your wine appetites change as the seasons change? Also, when you were first learning about wine, did you stick with one varietal for a month or two until you really understood it inside and out, or did you jump around from grape to grape? I am wondering if I will learn more if I stick with one varietal and try LOTS of different ones over, say a month’s time.

    Brandon:

    Buy space for at least TWICE as much as you think you’ll need. You will accumulate more iwne over the years than you expect. I bought a 300 bottle vinotemp – still have it in the house to hold my immediate needs- but have now also rented an external wine locker for my long-term aging cases. Tough to stop buying with so many regions having spectactular vintages year over year. Not like in the old days (a decade ago), when Napa and Bordeaux and Burgundy and Spain and Port would have a great vintage only 2x a decade.

    So…I’m bursting at the seams in my house. My 54 bottle wine fridge is full and my 4 cabinets are filling fast. I’m thinking about puting a 300 bottle Vinotech in the Garage, but not sure if this is the route to go. Anyone have any suggestions on Wine Storage Units, and / or alternatives?
