    Cool episode Gary! A lot of fun. Thanks for taking the boiling wine for the team!! I am big believer in “proper” temps for drinking my vino. I drink my reds around 60′ish and the whites around 45-50 degrees. I feel that I get the best expression at those a-typical temps. I will confess that I have definitely stuck a bad wine in the fridge though, because when it’s cold it doesn’t taste like much. haha

    Great ep as usual; I haven’t been ‘roofing’ my wines but I have been slightly chilling some reds and I have to say you are spot on. They just ‘tighten up’ with the cold and don’t smell or taste as full or complete as their room temp equals.

    Maybe there is something to what one lady told me about keeping a wine bottle fresh longer. She said she was told to keep an opened bottle in the refrigerator. When it was time to drink, she was told to pour the wine in a glass and microwave it for a few seconds. Maybe it works?!?

    This episode made me think of two things
    1) All those wines that got ‘cooked’ in New Orleans after Katrina. I read several articles about the bug insurance claims and what will happen to the wine. Any thoughts on that Gary? Perhaps you did a show on that and I have not found it.

    2) Does transporting a wine via aircraft affect it? I was told by a winery representative that transporting a wine via airplane will totally change how a wine taste for several days. Recommended not drinking for a at least 10 days after transport by aircraft. Really?????

    Interesting experiment. My girlfriend bought a bottle of 97 Altesino BDM Montosoli (not knowing what she had at the time) in 2002 when she was on a college trip in Italy. She has just kept it out in the open getting beat by direct light and heat variations over the last 5 years. I have tried this wine recently in a tasting and it is killer. I’m looking forward to trying my gf’s bottle to see if there is much variation.

    Great Episode. Close simulation to my Brooklyn Brownstone Apartment this time of year. I’m considering moving my wine from the rack in my kitchen to my bedroom that I at least air condition between 75 and 80 during the day when i’m at work. Its not a perfect solution, but better than the rest of my apartment.

    Gary, good job, I happened to boil a bottle today in the car, oddly enough, it leaked out of the cork, but seems to taste ok. Request- put episode 54 (I think) on the ’seminal’ list- with all the popularity, it was nice to see when you could have gone commercial and didn’t. While you may be the ‘web 2.0 commercial’, thats a good thing! I have been shouting out the podcast to everyone I know, which is the way things should be in the new era…

    Awesome episode. I love the idea as I have been experimenting with temps a lot more lately after some previous comments you have made about cold hiding the taste. For the record I have to agree with you that room temperature wines tend to have a stronger (for lack of a better word) taste. Warm wine in the cold months…looking forward to January now.

    I’m glad I caught this episode before Sunday….insane promos Gary! I really enjoyed the show too, don’t get me wrong. I know a lot of people who throw their reds in the refrigerator after they are opened. To me, it completely strips the wine of its original characteristics, and gives it that cardboard-like taste packed with tannins. Bleh..

    If you keep upping the bar like this you’re going run out of things to say (at this rate I say about 2026 – take that as it was meant – a compliment).

    The heat episode, 2 days late but several dollars short on the schwag…. can’t beat that. I bought one of those shark’s fin in a glass shirts. I’m not sure why, I guess I can’t resist a bargain and it completes the set (for now). I already have a bag for my wine, it’s brown and biodegradable (we’re changing the wine world, right?)

    Gary, Loved this episode. It was fun to see how the same wine was affected by the different conditions. Living in Texas I am afraid of shipping wine in the summer but considering how stupid our state law makers are I guess that will not be a problem soon. Sigh!

    While there’s no doubt that chilling particularly a red wine will, at/below some temp, mask the flavors and emphasize the tannins, drinking it at/above alcohol’s evaporation point (70 degrees F) will mask the flavors and emphasize the alcohol. Individual taste best determinate of where in the 50-70 degree range the experience is most enjoyable.

    First of all—-I love WLTV!!!!!!! I am so excited!
    Thank you, Gary!!!!!!!

    I already had the green single tote, so I ordered the double and 4-bottle totes. When you go on a road trip in a car, you need to show up at your host’s house well “fortified”. This way, I can now bring along 2 whites (perhaps 1 bone dry white and 1 Riesling Spatlese) AND 2 reds (perhaps a Merlot and a big-bodied Cab). No more trying to guess what the host might like or be in the mood for. I will have CHOICE. Hooray!!!!!! Normally I would not even THINK of spending money on something like this, that might be used only 1 X a year.

    Now that I’m going to soon be all toted out, I’m determined to start visiting more restaurants that offer those 1/2 price bottle nights, or that have reasonable corkage fees….can have more picnics in the park, and more fun w/friends…

    GV, when you bring the heat, you bring the heat. Great episode.

    Only just a month ago, I had a 2001 Penfolds Koonunga Hill Shiraz Cabernet. The first poor was at room temperature, and it was wonderful. I forgot about the bottle, and left it out overnight. It was around 90Ëšall night. When I woke up, I was horrified to see the bottle still out in front of my window. I can’t remember if I tasted it or not at that point. I sealed it with one of those vacuum toppers, and stuck it in the refrigerator. Later that night I tried it and it was awful. I have no idea now if it was being open at 90Ëšfor seven hours, being chilled to much, or the change from hot to cold. After watching this episode, I suppose the later.

    Boy am I getting this party late today. Well the party looks so far like a whole lot of guys and two dozen women.

    Hey Gary. Terrific show. I agree with your idea of the variation on the same theme. Leave a wine in the hot car (or the roof) for a day, let it settle down, and see if it suffered any lasting damage. The scenario of forgetting purchased wine in the car or driving around for winery tastings is very relevant. I certainly have done it.

    That was an EXTREMELY good episode. A coworker just last week told me that he inherited a lot of “61″ Bordeaux which is a stellar vintage but he was worried about the condition due to the ullage. I went over to check out the bottles and they were great Chateaus including La Tour, Leoville, Lynch-Bages etc. Sadly the corks were bulging out the capsules on many of the bottles. The ullage line was very low on the shoulder on most. In the light the wine had very little color and a lot of sediment which was to be expected. He had opened two bottles recently and the corks crumbled and the wine ruined. I now think thanks to your experiment that these wines got cooked at some point. Originally I thought they had been frozen or something that exerted pressure from inside the bottle against the cork from expansion. Any advice for my friend, Gary?

    I will commonly drink a glass or two in the evening with dinner and put a vacuvin stopper in and put it in the fridge. The next day I’ll try it and won’t wait for it to reach room temp and sometimes it will improve the flavor! The vegetal characteristics are muted and the fruit retained. I too like to drink red wine at room temp because it reveals more. I also like to let white wine warm up a little after refrigeration. I haven’t tried the microwave trick yet but now you have given me the impetus to experiment.

    I’ve tried a similiar experiment with wine temperature several times and I found that cooler temperature wines (in the 40s and 50s F)tend to show several characteristics:
    1. Fruit flavors seem to be more muted than if it were served at a temp in the sixties.
    2. The fruit flavors of chilled reds tend to be tarter
    3. The mouth feel is ‘thinner’ or less viscous (ex. a merlot that isthinner waterey when cool and plush and velvety when at least in 60s)
    4. When frozen and defrosted, wine will precipitate tartrates where one can see some stringy crystal thingies in the wine.

    Furthermore, in my findings I noticed that wine served at a warmer, temperature 80F plus, tend to taste flabbier with what tastes and feels like wine with less acidity.

    I think that a fun way to approach the experiment would be to serve a wine without exceptionally high acidity at a measured 45F, 65F, and 85F.

    These findings are why sometimes I prefer serving Zin in the low 60s so it doesn’t taste like flabby jammy stuff to me. During the heat of the summer, I tend to drink red wines in air conditioned enviroments or white wine & beer outdoors.

    I liked the Macchiole at the nyc off-line dinner. It didn’t blow me away, but at 25 bucks it is a great QPR. I am geting two bottles of the Moccagatta Barbaresco by the way with my raffle prize. While it was really dry by itself I kept coming back to it during the meal.     I cooked 6 bottles of ‘79 Longueville when the wine cooler went out. Ruined them completely and they had been stored perfectly after that but they got to 90º for 5 days and the corks fell apart when opened so I know you can cook wines.

    I admire your experimental approach, and I would love to see more of it. Check out http://www.wineloverspage.com/wineadvisor/tswa010618.shtml for a similar experiment performed some years ago with a cabernet sauvignon. He was less interested in the effects of serving temperature than the effects of having previously cooked one of the wines. So he blind tasted the cooked and uncooked wines a few days after leaving one wine in a hot car all day, i.e., when both were at the same serving temperature. And he got a similar result — the heated wine seemed more mature.

    All this suggests that shipping wines during the summer may not be a huge problem, provided one intends to drink the wines right away. It may produce a somewhat different wine, but not a ruined wine. On the other hand, the conventional wisdom is that a heated wine won’t age long or well. It would take a rather lengthy experiment to test that, but it would be interesting.

    I was glad you mentioned that you would redo this episode because unless you live in the sahara you won’t be drinking hot wine. I would like to see you taste three wines–one was stored in the 80’s or 90’s, one in a wine cellar and one at room temperture. They would need to be stored for at least a year. Then taste them all at room temperture–BLIND. I think this will be a more meaningful test.

    I dissagree with Mr. Cabernet.

    He could have tasted the same bottle on the roof for 3 hours, after letting it get back to completely room temperature. The same goes for the colder wine, allthough cellar temperature would be interesting too. The wine does not need to be stored for a year, because this situation is very common when people forget wine in their car. No one would drink it right out of the car, rather after it cools.

    Finally, perhaps Gary could send a bottle of wine out through ground shipping to the middle of the U.S. and back, and then let the bottle rest for 3 weeks to simulate bottle shock from shipping.

    And to you Gary, I appologize for refering to you in the third person in an e-mail to you, and using this comment as a discussion board post!

    Interesting episode but I’m not surprised. Taste is largely olfactory — the result of volatile compounds interacting with our sense of smell. These compounds evaporate at different rates which no doubt accounts for the shift in bouquet. Heat speeds up all chemical reactions, which may mimic aging, but it could also chemically alter some of the compounds that give a wine its characteristic taste. Taste the heated wine at room temperature to compare.

    Isn’t this worth some kind of freebie? =:

    Your show just confirmed a sneaking suspicion I’ve had around “cooked” wines. My husband and I brought a bottle to an event at the beach that sat in a hot car and it turned out to be one of the best I’d ever tasted. Maybe it was the cold wind or the ocean but it was rich, warm and perfect. What was it? That’s hard to say as it was five years ago. Maybe ten years… Something red costing about $15. Thanks for the interesting experiment.

What if a wine is stored in a liquor closet (one that is not temperature controlled) for several years, through hot summers and cold winters. Will that speed up, slow down the aging process thus ruining the wine? How much worse do you think that is on a wine then just heat/cold?

    interesting concept for today’s show. I’ve always been leery of big dollar wines that are racked in the middle of the shop, for how long, and under what conditions? For today’s test, I think the wines should have been exposed to the heat / cold and then allowed to come to room temperature before comparing them.

    Interesting show. I think the cold wine was a good comparison, because some people might drink it that way, but it probably would have been best if the “flash-aged” wine could have been brought back to room temp because almost no one would drink wine hot. However, I like these shows that involve experimentation. We scientists are like that. I think it would be good to do a more extended experiment at room temp. Take the same wine, put a bottle in a fridge for a year to preserve it and not let it change. Put another bottle at ideal cellar temp, put a third bottle at about 80 F for a year and put a fourth bottle at about 120 F for a year. Bring them all to room temp and then taste them after the year aging. It would be interesting to see if the 120 F wine would be wrecked or merely aged as though it was four or five years at cellar temp.

    Fun show. But I’m not so shure on the validity of the results. Apparently a big and bold wine can stand the punisment. But what happens with a frail(er) wine. What about a old Pinot or a Gammay for instance? What about one of your favorites, a pouilly fume? I bet the results would be much different.

    You would be surprised how many containers of wine enroute to distributors sit in temperatures exceeding 80 degrees. The show gave me an idea for a recipe:
    Sun Brewed Mulled Wine
    1 btl red wine
    5 cloves, 2 cinnamon sticks, 1 orange peel (1/4 of an orange)
    Open btl of wine and pour out a glass. Add remaining ingredients, recork and duct tape the neck of the bottle. Place on top of a tarred roof and let brew for 3-4 hours or until the duct tape gives. Serve with Homeless Man’s Chili (day old coffee, a shoe string and pigeon).

    Catching up on old episodes from vaca last week – excellent show Gary, you are creative! Would really like to see an episode where you do the same thing, but leave the wines at the temperature extremes for a week. Then bring them back to cellar temp and hold them for three months. Then taste …

    26-m-Fl. Love the episode! I agree with you about things being too cold but I like them right in between cellar and room temp. Obviously room temp here in Florida is A little to high for pleasant drinking. I do find with some whites that are over-acidic, cooling them considerably helps make them more palatable. Why don’t you do the Le Macchiole merlot sometime, i’d love to see you critique a 100 point wine.

    Finally, it has been recognized that cooked wine is not bad wine, in fact, sometimes it makes the wine tasted better when brought down to room temperature, hence the accelerated aging aspect. Thanks so much for educating people on this important aspect because many people do just leave wine in their cars only to get cooked.

    Great to see this heat episode……A question… It is always stated to drink reds at room temperature….what is really room temperature….in Malaysia the room temperature is pretty high…78F-80F. So how do I keep the wine in good condition not for a long duration but maybe for 1 month or 2.

    Hilarious delivery. Enjoyed this show. Would like to see the heated wine cooled back to RTP and sampled the following day to see if it still stayed good. Would also like to see an episode where the wine gets seriously cold, even partially frozen, then re-warmed to RTP. Perhaps you do that somewhere in episodes 275-675.
