Thanks again for an informative and entertaining show.
QOTD: I used to be a well done guy but have moved to medium rare. Oh, and having the dessert wine knock me off my seat.

Nice show Gary. Like the idea of a dessert wine with the steak. MIght have to try that soon. I have a bottle of Ice wine at home that I have been wanting to drink.

So whats this about my beloved pittsburgh steelers? I was suprised of the lack of chop busting from the game a couple weeks ago :)

QOTD: I used to be a well done kind of guy. Yeah I know, no flavor. Well, the last 5 years or so its been less and less. And now I am just stuck on ordereing my steak medium. I have tried med rare and just too much blood :) . A good mediaum with plenty of juice, tab bit of blood. Its all good. The last pairing I had was a aussy syrah with a med sirloin. Tasty!

Does a quality steak house even cook a steak any other way except Medium-Rare? If so, they shouldn’t. Ok, MAYBE medium.
    But for me, Medium-Rare.

    QoTD: Med-Rare – But I don’t want the 5L bottle of wine – I just wanna leave a comment…greed-free!

I would never have paired a desert wine with steak. And while I might try it just to see what happens – I find I can only take a few sips of most desert wines before the sweetness saturates my pallate. I am open to giving it a shot though.

Still just desert-wine portions…right? More for sipping than drinking?

Thanks for the FREE show…keep up the great work! Oh and Merry Christmas!

    to medium well-done.

QOTD: Medium Rare with sauted mushrooms.

Nice break on the interception, he acted as if it was so ‘matter of fact’ when he ran it the short distance into the endzone… Nice.

I like my steak medium well.

A bit disappointed with the actual wine-showing, but it was interesting to see that last pairing – something I’d certainly never have considered.

I like my steak barbecued medium-rare with some great bleu-cheese chunks and crumbles atop. It’s hard to go wrong with a mushroom-steak pairing as well!

medium rare is the way to go. don’t want to cook the flavor out of it.

I’ve got to have my steak nice and red with juices running all over the plate and into my side dishes.

NY Strip or Delmonico MR. 98 and 99 Barolos are drinking very well with such a steak right now. They have a great acidic, or rather tart finish, but full bodied mouth feel.

    ondras

almost raw with sechuan pepper. best pairing so far: kabinett rieslings from rheingau or gewurztraminer from austria

QOTD: When I buy less than great meat, I cook it to well done.

QOTD medium rare, but edging to rare. Always ask for rare, it can always go back on the fire, never undone.
Gary… how come you did not spitbucket the steak? What cut was it, and how cold?
