    well holy sheep shit gary, jeffery davies is the guy! i first came across him really when i read “noble rot” which is sort of the “page 6″ of bordeaux. anyhow, he was still really modest about his accomplishments. if anybody really helped change the wine world, it was him, with some others too.
    on that note, you held your own. that is a tough table to be at.
    QOTD – I am a huge fan of decanting. my wife bought me a decanter a year ago, i take to peoples houses sometimes : ) i just don’t decant white wine. maybe i should try. i am a big fan of the “double decant” it is easier at the table

    Decanting is a big part of the wine preparation for us. If we don’t finish the complete bottle, which is rare, we pour it back into a smaller bottle with screw cap to preserve what’s left. We have several sizes depending on how much wine is left.

    I collect antique decanters. I have about 20, glass, silver and glass etc from France, Italy and England. It’s great having friends over and decanting everything we are having that night in all the various sized and shaped decanters. Kinda like a mad hatters tea party but with wine.

    How neat! I can tell Jeffrey has been watching the Thunder show.

    QOTD: Absolutely, I agree that it’s important to decant red wine. The tannins soften and the beautiful aromas sort of appear out of nowhere. This happened recently with a wine that I thought was horrible out of the bottle but improved so much just sitting in my glass, er, cos I thought it was awful. After a while *chocolate* started to emanate from the glass!
    I bought a decanter recently but realize now that it’s really some sort of serving showpiece thing :-) . Need to go out and buy a proper wide-bottomed decanter.

    QOTD: I have started to decant wines that at first taste a little tight, and they really open up if you do. I have probably decanted the last 3 or 4 bottles and it really does make a difference.

    Now THAT was a great show! Mr. Davies showed an intrinsic knowledge of Bordeaux and wines in general. Kudos to you both.

    QOTD: How I decant my reds is by pouring a glass and putting it in the fridge for 10 mins or so for every glass during the week. If I’m having guests, then I decant for an hour or so. Whites, almost never.

    Ok Gary you have done it once again, Jeffery Davies was great and I hope that you where not that hyped over him being there on the show cause when I saw that you had the Chateau Bellevue 2002 on the show I was like:DDDDD cause that is one of the few Bordeaux that I have in my shop witch are not like gazzilling price(tho expensive wines are cheep here). Now I can sell this vintage with confidence:)

    Really, really enjoy those guest shows. JD was a pleasure. QOTD: depending on the wine, I do decant, but typically I open a bottle between 12 and 2 in the afternoon and let it breathe for 4-6 hours. Often, I will start sampling small quantities, then, after about 2-3 hours to see how it is opening.

    I decant everything, including my pee. I’d recommend setting aside a decanter soley for this purpose. Wine is like the blood of grapes. Where is the free bottle of wine today? I just love it. Best decant for me was Tablas Creek, really stripped the wine naked, more naked.

    I think a decanting episode is in order. The first episode showed rightfully that decanting was a useful thing to do, but as someone new to wine(I just turned 21 in aug) I just don’t have experience to reason out the do’s and don’ts. I’m aware that certain more “fragile” wines can really be wrecked by even a little bit of decanting while you can lay on heavier wines for hours on end and experience benefits. Everyone has opinions on the subject in general, but it would be nice to know from the “decanter believer” perspective which kinds of wines you should/can freely decant and which ones you need to be careful with/should not.

    Best guest visitor show I’ve seen…kudos man. I was fascinated with what Jeffrey had to share about Bordeaux and the different areas/vineyeards.

    QOTD: I always decant when I have people round for dinner. The problem I have is that I usually pop open 3-4 bottles and only have 1 decanter so I tend to decant the best (what I precieved to be the best one) for several hours (usually at least 3). Might have to go and get another decanter now !! Interesting comment about serving the wine slightly cooler .. I have done it a couple of times and actually found I enjoyed it … didnt think anything of it then, got to try it again.

    OK, OK, I will watch #18 and start decanting more often. I usually drink wine at home on weeknights and come right in from work and pour. As such, decanting conflicts with the instant gratification thing I like to have goin’ on.

    I know there’s been a lot of discussion about decanting in the forums, and I’m part of the group that thinks that decanting can hurt some wines–and I’m not talking only about well-aged wines. For whatever reason, some wines just seem to fade away after a couple of hours in the decanter, so I don’t understand why some people insist on decanting “every wine,” or “almost every wine” they drink. Anyway, I guess my point is, you have to taste it and judge for yourself before you commit.

    That my friend was a great show. I usually decant my better wines, although I’m afraid to decant those 20 – 30 year old vintages. I let them open up in the glass.

    Because I’m drinking my everyday stuff over two to three days I don’t feel it necessary to decant. This is probably the reason some of those $20 reds taste better the second night.

    So much great information to absorb in 30 minutes! I’ve never personally used a decanter. But I do use the Vinturi-which aerates the wine as it pours into the glass. Much faster than traditional decanting.

    QOTD: I decant most reds, even if it is just to filter (as more and more wines seem to be going unfiltered) and aerate in a wide mouth decanter and then pour back into the bottle (rinsed if it has sediment) if it is ready to go.

    Great episode tonight, a lot of good information. I do have a question about the temp. when decanting. My cellar temp has dropped between 50-52 could I leave there and decant or should I decant at drinking temp 60-65?

    QOTD I actually had a wine that was decanted for about 4 hours tonight and it vwas the best wine I have ever had 1983 Chateau Margaux. For older vintages you really should, especially because of sediment. You gotta let the wine breath also… if you held your breath for a minute how good does it feel when you take that first deep breath

    QOTD: After Gary’s show on decanting I bought a decanter – super inexpensive from a discount store, but looks like the Riedel one. The store thought it was a vase and put it in with the vases. Sometimes I forget about it, but it works particularly well with Cabs and Pinots. I haven’t found it to help Zins.
    To skip back an episode or two, did anyone take pictures when Gary was drugged and taped to the couch?

    This was by far the best WLTV episode I have had the pleasure of watching. Dr. Peynaud (GBHS) is one of my heroes and is probably the man responsible for the modernization of winemaking. Along with Mr Davies Michel Rolland also learned at the feet of Emile Peynaud. I would hope that Mr. Davies could reprise his appearance soon with some more inside knowledge of Bordeaux history. Mr. Davies adeptly described the terroir and its proximity to well known Chateaus. He explained about Petit Verdot’s use as a color brightener and source of acid balance. As you go South of the Medoc and Margaux you get to Graves (Haut Brion) which literally translates to gravel. The use of the actual gravel from the vinyard as a prop was brilliant! In the Southern Cotes du Rhone you get the larger rounded stones (Galettes or Cailloux) that absorb the Sun’s warmth and radiate it back to the vines during the cool night.

    Some earlier posts were trying to convert you from a fountain into a well…
    You are so used to carrying the content yourself but I am seeing you evolve as a decent host that asked good questions and still interjected your independent view. I understand your off the cuff format where you taste and describe without any rehearsal. In earlier episodes involving expensive wines you would state that the wines were opened and decanted and poured back in the bottles. I couldn’t agree with Mr. Davies more that a little chill on a red wine is a good thing. You know how you complain about the excessive heat of a 14.5% Aussie FB? Well a little cellar temp would fix some of that for you. White wine on the other hand is often served too cold and should be given a chance to open up if you really want to experience the tertiary flavors. The exception and sacriledge is serving a 94 scoring Champagne at room temp. Who would ever drink it like that? Get out the ice bucket next time and pop it live for the education of how to open Champagne properly before its too late on New Years Eve and someone gets hurt.

    Keep up the good work and I’ll be seeing you on Prime time in your own slot someday soon because you are too good at what you do.

    To pour is fine, to decant is devine…For those who thought it was an expensive accessory you can usually find decanters at second hand shops on the cheap. Just remember to look for the wide base or duck type that allows a generous surface area and not the tall ornamental type that is used for spirits.

    Great show. Davies is so smooth. A great personality and a great honor.

    However, I do not always think its best to decant. For many red wines, even some whites, it does help. But it can also hurt. In the case of very old and delicate wines, I think it’s better to let them open in the glass. Even though they may contain a lot of sediment, older wines may not stand up to that kind of volatility. I have learned this the hard way.

    Everybody is always talking about fancy decanters and products and such. I like keeping my wine service as simple as possible. I had a bottle of 97 Pesquera that was closed and sediment-y, so I decanted it using a mag-lite and a mason jar. That took care of the sediment and opened it up quite nicely, especially after it sat for a while. Beautiful wine too.

    GV, It’s always a great show when there’s a special guest. Nice work with that the past couple weeks.

    OK, first of all, I’m going back to Bed, Bath & Beyond (I was there earlier this evening buying some stuff) and I’m going to buy a wine decanter, and I’m going to decant any red wine I drink from now on. I want to experience the quintessence of this thing that wine can give. So, thanks for that.

    Next, I’m going to buy these wines, and I’m going to taste them, and watch this video again, because I want to understand that thing, that thing, that experience that wine can give, because I don’t think I really know it yet. But, I believe it is there and I believe I can understand it, and I believe it is really special. I believe it is a little like Nirvana, like making love to the earth,and knowing the sun, and the rain, and the rocks, the dirt, the moment.

    I saw an emerald from South America once. It was huge and green, and I understood, as I looked at it, that it was perfection, rare, a coming together of so many forces that does not happen most of the time, so when it does, you are blessed to get to see it. I think really tasting a good wine could be like that.

    It really amazes me how much knowledge is out there about the winemaking process, the source of the grapes, and the techniques of the growers and winemakers. Plus, it makes me really excited to know that there are premium quality low priced bottles out there.

    QOTD: I frequently decant my wines, it’s great! Lately, I’ve been doing half in the decanter and half in the bottle uncorked. It gives me the opportunity to control the aeration a bit if we decide to not drink all of it and I’m still trying to discern any differences between aeration in the bottle (with some poured off) and aeration in a decanter.

    I do usually drink my reds in the high 60’s to low 70’s. I just got a wine fridge, so that should make it easier to drink at a somewhat cooler temperature.

    I can only afford 4 glasses at the moment. I drink primarily white whine 80% (Rieslings, Gruner Veltliner, Gewurztraminer, and Chardonnay), with a little red 20% (Primarily Pinot Noir). Should I get two “reds” and two “whites” OR 4 reds and drink the whites out of them. If I go with the 2×2, which glass types would be the best? NOTE: Once a week, I open 2-3 bottles of mixed wine with 4 (rarely more) to share with friends who all care about learning about wine. So, it would be nicer to have 4 glasses that matched. Which one glass would work best for now until I could purchase a white” set?

    Salvatore – no it will not. Once the air has come into contact with the wine the process begins. Many people pour back into bottle and take to restaruants and pay a corkage fee.

    Great show, and good question. I have been thinking about getting a decanter for a while now, provided I can find the space to store it, but I have been letting the bottles breathe for a few hours lately and that has definitely softened the wines I’ve been drinking. Of course, by the end of the evening, I find that everything is better, more complex, and easier to dissect, and all that. Maybe that’s because by the end of the evening (in addition to the bottles being open for even longer) I’m more relaxed and less inhibited about what I think I smell/taste. :)

    Quite possibly the greatest WLTV episode, Jeff Davis wines have been a sure thing for as long as I’ve been a wine drinker and had a big influence on my palate. Those Languedoc wines of his years ago blew away any competition for a modest price. Thanks for sharing your knowledge, Gary and Jeff need to do this again.QOTD: Decanting is a neccessity for many wines especially if it’s Bordeaux.

    I agree… I would have liked to hear what he had to say more. I did enjoy the show though. I would have used the rocks for a display case for that wine, rather than giving them away, but hey, you’re a generous guy!

    QOTD: wasn’t really a question as much of a request, but… I started decanting less than two months ago and it made a BIG difference. Used to be that by the time half the bottle was gone the wine was finally showing its true colors. Now we get a much better impression from the beginning. But that isn’t the question, is it. Why not? Because you’re at a restaurant and they don’t decant. The question should be, why don’t restaurants decant?!

    QOTD: I think we decant about every other bottle. I would decant every bottle if I had time. Usually we get home from the gym and start fixing dinner and pop the bottle that we are having. If I have the foresight to pour it into the decanter before we go the gym we would decant all the time.

    Loved this episode. I’m putting together wines and materials for a Bordeaux tasting right now, and this gave me a lot I can use.

    QOTD: My husband rarely drinks wine, and I don’t drink a whole bottle myself all at once (or at least, not usually :-) ), and this tends to keep me from decanting. Sometimes if I feel the wine really needs it I’ll decant and then pour what I don’t drink back in the bottle to save for the next day or two. I think after listening to this episode I will resolve to decant more frequently. But — repeating a good question someone else asked — why don’t restaurants decant more often?

    QOTD: Why not decant? Good reasons have already been posted. Frankly, I don’t drink a whole bottle in a night or two, so I can see the point of the commenter who said he likes to experience the evolution of the wine in the bottle.

    Still: there is no excuse for NOT having a decanter on hand. Get one NOW! You will use it on occasion. For other occasions, I like to slow it down and keep the bottle corked.

    QOTD: I decant if I am expecting a lot of sediment or if I am drinking what I am sure is a very young wine. Otherwise, why decant? I think that using proper stemware is much more important than proper aeration, especially in the wines I see on the Thunder Show.

    A: as an on premise wine buyer/suggester, I find a few reasons not to decant: 1. given the season, the next bottle i open might be a sparkler; 2.i’ve tasted and sell a few bottles that begin to lose their appeal after they open up, therefore if they are the next bottle i open, they should be served immediately after opening;… shit, even these reasons why not to decant seem spurious. Let’s try to decant a champagne, let’s see how that ‘07 chilean cab/carmenere tastes with a few hours of breath…. More importantly, how bout today’s guest’s use of the term meniscus???

    QOTD: I like to decant nice wines, however I am drinking mostly Montenegrin wines at the moment (I live in Serbia) that I don’t think would really live through a good decanting. Though maybe I will try it latter this week. They are reasonably priced here so if dies I will just throw it on the stove with some spices and make spiced wine. The wife likes that. Then I will just pop open a Prosecco.

    Decanting is fine and dandy, but requires some planning and requires time I don’t always have. That said, if I know I want to have a wine with my dinner, I’ll decant.

    I’m always surprised just how much a few hours in a decanter can help a wine though! I had a wine last week that I popped, poured, and drank and thought was pretty darn awful. I only made it halfway through the bottle, so I re-corked and gave it a chance the next day after decanting for 5 hours. Wowza! Mega difference! Still not amazing, but definitely a MUCH better.

    I always decant (except 2002 Jocelyn Cab). I was standing in the tasting room at Provenance Vineyards as a guy was buying my favorite Merlot (the 2002 Las Amigas). I suggested he decant it for 90 minutes and he would be rewarded. He tried to give excuses as to why he probably couldn’t. (I suggested he open something else to drink during the 90 minutes.) Finally, he agreed that he would do so. During the discussion, the wine-club lady mentioned that the wine maker Tom Rinaldi practically preaches about decantiing.

    My mom and sister both hate me for being such a decanter nazi, but I think it’s worth it and well worth the wait.

    QOTD: My decanter gets an obscene amount of use. I decant almost every red wine I drink at home (when I know which wine I’ll want ahead of time), and this year I began decanting several whites.

    Decanters make great gifts for wine-drinking friends & family members. I’m giving a couple away myself this year.
