    QOTD: I could eat pizza everyday. Classic Pizza Margherita. Mmm. I’m not a big fan of heavy cheesy pasta dishes. But beef, chicken, veal, seafood prepared in a good Italian restaurant are all excellent.

    I want to be able to afford Barolo. I’ve had young inexpensive nebbiolo but never the “good stuff”.

    QOTD:
    Ravioli. You can do so many things with it. The filling can be seafood, cheese or meats. You can use different sauces from Red to white. You can add things like mushrooms or sausage.

    I made some Lobster ravioli last weekend with s puréed shrimp binder. Made a Vermouth, shrimp stock, cream sauce. It was heaven.

    QOTD – My favotire Italian dish of all time is Spaghetti Carbonara. I judge how good an Italian restaurant is by how good the Carbonara is. When I spent a few days in Rome, each place I ate I got a small plate of the Carbonara to start and then moved on to the rest of the menu.

    haha, I was going to comment that you’re doing the whole finger quote thing like mad in this episode, but you figured it out yourself.

    Sounds like there’s lots of pictures being taken today… going to be another magazine article soon?

    QOTD: All of it! Italian is my favorite food (and wine). I would have said gnocchi a few weeks ago, but then I was food poisoned by some and wound up puking for days, so while I know it’s generally delicious, I just can’t stand the thought of it right now. I hope that experienced didn’t ruin me.

    Almost any pork product in Tuscany. Especially the pieces of larded ham you can buy in the market. Don’t know what wine goes with that but why not Barolo. Have not bought any in the last 2 years as the market for them was soft and the flavor profile not to my usual taste in Barolo. May have to get some 2004.

    It was nice to watch a show with a wine, as serious as Barolo. I personally love Barolo, but at the same time I believe that it is a type of wine, that needs to be aged properly before drinking.

    QOTD: I love Italian food, and couldn’t possibly choose just one, but a few days ago I made a risotto that turned out great :-) Arborio rice, a nice pinot grigio and a 16 month old parmigiano reggiano, made it smooth, creamy and rich.

    I’ve been on an Italian wine jag this winter, and I’ve just started to explore barolo (will keep my eyes peeled for the renato and grimaldi). I like the cheaper nebbiolos, too, which is probably a good thing since my other favorite Italian wine is amarone. Thank goodness for ripassas.

    That is actually a very tough question. When in doubt go simple. The most simple decadent Italian food is classic Alfredo sauce with fettuccine, a little coarse ground black pepper, some fresh parm. Oh man, that sounds good.

    Is the sugar-fied thing becoming more popular in Barolo these days? We had a sugar-fied barolo – 2001 Cavallotto Barolo Riserva Vignolo – that the wine advocate claimed was in a more rustic style, and it did have a little residual sugar, though with ripping tannins to balance.

    QOTD: I find Italian food rather bland and boring. I mean, it’s ok, and all, but I’ve never really been enchanted by the aromas or flavors, compared to French or Asian cuisine. My dad’s not a big fan either, so we rarely have Italian at home.

    First show that I watched with my kids. Amanda (9) and Andrew (7) both showed great interest. Andrew especially loved the Escargot comment, as that is his favorite food. He also said many times how you are a touch “freaky”….cinammon toast crunch threw them over the edge.

    QOTD: That is such a tough one. I love a good risotto, never turn down a fresh caprese salad or carpaccio, but I think I’d have to go with a simple prosciutto sandwich. Actually wait, the speck (smoked proscuitto) pizza at Pizzeria Mozza almost made me explode, so I’ll vote for that.

    I had my first Barolo on Friday night at Eno Vino (in Madison, WI) with two other Vayniacs. Thank you for the FIRST Barolo show – it’s what made me willing to try a wine a tad out of my usual price range. (We’re all part of the – what is it – the grad student group? You had a word for it. The poor student Vaynernation. That’s us.)

    QOTD: When people think of Italian food they naturally think of pasta. I love pasta but I’ve had about enough pasta that I don’t really think of it anymore as my “favorite” Italian food. One of the Italian foods that I like right now is risotto mainly because I havn’t had a lot of it. Theres so many things you can do with it and I love trying new things. I also really like Italian seafood dishes. Next time you go to an Italian restaurant, try ordering a seafood dish, even it there is only one choice on the menu.

    Love the Barolo…..I haven’t had one in many years. Today’s prices are out of my league. I had a ‘66 Barolo Riserva Spceiale from Luigi Calissano that cost, get this…… $5.75. I held it for 12 years till ‘78, there was sediment and I had to decant it. I really enjoyed this one……deep ruby color, heavy fruitty nose, rich robust chewy flavor and a clean aftertaste. Those were my notes in an old wine book I have.

    QOTD: Lasagna has to be my favorite.

    GV, loved the Bledsoe story. As a Pats fan, it is impossible not to have a ton of respect for Bledsoe. The way that he handled himself in 2001 (when Brady took over) was just an amazing show of class. Not sure if you ever saw the full page ad that he took out in the Boston Globe after he was traded to Buffalo to thank the New England fans- what a class act.

    QOTD: Tough to say my #1, but I love Straccetella (sp?) & pistachio gelato. Also had an amazing Seafood Risoto in Monteroso. Loves a good Caprese salad on a summer day. There are just too many to chose.

It’s always fun during football season when you talk about a game coming up on the weekend. Again, it makes it feel timely (for lack of a better word).

    QOTD: Now you’re hitting my pal. Italian food. I’m a huge Venice lover. I try to go every other year. So my faves tend to be seafood based. #1 is seafood risotto. My second is seppia con nero over spaghetti. Seppia con nero is cuttlefish cooked in it’s own ink. When done right (and not overpowering) this is a simply wonderful Italian dish.

    Actually Gar, so so show, let me explain why… I am completely clear on your liking the “classic” tasting Barolo’s (or any other wine, for that matter), but frankly we also need to re-visit the possibility of these guys doing different (read newer and better) things viticulturally. I mean, so people were upset when our friend Angelo Gaja brought oak barrels to PIemonte and even started ignoring the local DOC rules (most of his good stuff is Langhe as we all know)…
    so sometimes (like the last wine of the show) a little bit of “new world” smells or tastes are not always (but I’ll agree that more often than not) a bad thing… just a thought.

    QOTD: That’s like asking me which brother or sister I like the most, lol. I would have to say a Tortellini Tricolor pasta with sliced grilled chicken in a white sauce that’s like liquid sex from a small Italian restaurant in Hattiesburg, MS. And yes, I’ve eaten Italian all over the US, that just happens to be my favorite. It’s simple, not over done and just freakin’ good : ) And of course, pizza is the perfect food. How many foods can you leave on the counter all night, wake up the next day and eat cold and stale and it still be good, lol. Best comfort food when drunk as well ; )

    Just tasted these wines over the weekend along with 6 other ’04s in a local winebar, great timing!

    Having only had a few Barolo’s in the past, it was enlightening to taste “elegance” with such huge tannins, like Burgundy on steroids. Really good stuff. Seems to me that at this price to get this kind of ageability, complexity, and enjoyability is pretty darned good – I have certainly paid a lot more for a lot less (Silver Oak comes leaping to mind). FYI, the 2004 Renato Corino Barolo Normale was a crowd pleaser (drinking well young, it seems) and the cheapest of the flight.

    Great show, hope to see more from you on the 2004s. How about a little more of a Barolo primer for those of us just now getting our feet wet?

    Top secret to make amazing sauce and meat balls. Add a cup of good red wine to each when making them. Also add anchovy paste to your sauce.

    qotd: what about a home-made bruschetta.
    Very basic but on of my all-time favorite starters. Make sure you have a good quality ciabatta bread (crunchy on the outside and, full of air-bubbles on the inside).
    Slice the bread and roast it golden brown, than remove from the heat and rub the bread with fresh garlic and drizzle with the best (extra virgin) olive oil you can get. After this basic version you can top the bread slices with all sorts of fresh ingredients, like the veggies!

    Polenta — I love polenta with seafood or small game . Excellent country fare (the Italian answer to gits). I’ve even had it with squirrel (and rabit in the winter) at mamma Bennvenuti’s house. The old man hunts them with a .22 rifle down by the river and she par-boils and fries them with garlic, onioand serves them over polenta. Wine at their house ain’t no big deal — Gallo from the jug. But the folks are great people and truly the salt of the earth.

    ? for you: When you rate a wine, are you going by your own palate or a combo of you and how you think the masses would rate it. I ask because the last wine didn’t seem to do anything for you (other than the ageability) yet you gave it a very respectable 90. You reaction had mid-80’s all over it.

    Carbonara – best as the post show 3:30 AM pre-breakfast…with Guanciale not Pancetta, and one local farm egg yolk for each bowl.

    Sausage and Peppers…in the oven not grilled.

    Bolognese…not too traditional (I go Alice Waters/Mario and sneak in pancetta and thyme with sincere apologies to Mother Marcella)…but still 5 hours minimum…

    Risotto – rice, broth, onions, saffron, marrow, Parmigiano…19 minutes…

    Caprese in (late) August in Michigan…

    Gary you are amazing and a daily inspiration. Keep on keepin’ on.

    And since you mentioned english peas, I made risotto last weekend with portabello mushrooms and english peas fresh from the farmers market, used an idea from a recipe in Vino Italiano, and served the risotto on a bed of salty mashed carrots. Sort of a goodbye to winter and hello to spring all in one dish. Very recommended

    QOT: so much stuff. veal osso buco with lemon and sage. real pizza from napoli. homemade pasta from anyones grandmother. panacota. risotto. there is a dish in rome, just rome that is the intestines of a baby calf that is still milk fed. they kill the calf a few minutes after he drank and quickly take the intestines out. they are filled with milk and they tie it into sections, cook it until the milk turns into a yogurt type consistency. crazy! good tripe is good too. oh yeah, barolo too.

    QOTD: It’s the individual ingredients that make great food, isn’t it? Basil-what an herb! The Italians sure learned how to use it. Love fresh pesto. Also love a perfectly ripe, home-grown tomato sprinkled with fresh basil. Ok. I also love pizza, especially (I’m being very un-humble here) my own. And, of course, the Italians also know how to use garlic. Love the garlic. All must be consumed with a good red wine, naturally.

    QOTD: I’m very simple when it comes to Italian foods. If it is prepared properly (lots of cheese), then I would have to say Lasagna. Otherwise, I’m a huge fettuccine alfredo kinda guy.

    I left one comment of the 2 “road shows” that you did. You are correct, you did not ask a QOTD and I did not invent one for my self.
    LOVE Barolo – my first experience was a Cabutto Barolo (1997) that I purchased a 6 pack of, most of which is still resting.

    QOTD – Love Veal Oso Boca (not a good speller of this dish), polenta, and a cannoli.

    QOTD: Favorite Italian food? I am going to cheat and go with a meat dish and a pasta dish. The meat dish is veal saltimbocca a la Romana. The pasta dish would be Canneloni Fiorentino.

    It’s interesting to see the alternating QOTD answers vacillating between Italian dishes and Italian-American ones. Hospitaliano is not Italian. Nor is “Parmesan”. There is Parmigiano Reggiano. That’s delicious.

    But I’d say my favorite Italian foods have to include Culatello di Zibello (think prosciutto but way better) and truffled risotto.
