    QOTD: All time favorite pairing is probably one that I stumbled upon by accident. We had a bottle of petite sirah open, and that night I made some beet risotto. the beets pairing amazingly well with the PS, each of them bringing out new flavors and enhancing the other.

    As a general favorite pairing, though, sancerre is usually what we turn to. I’m a “pescatarian” (someone who’s usually veg but has fish/seafood), and sancerre matches up with many dinners around here.

    Sancerre is always good – Big fan, hugely popular here in Ireland like everywhere else.

    Question of the Day – Seared Tuna with Asian Coriander and noodle Salad with NZ Sauvignon Blanc.

    Still not loving the mic either !

    QOTD: Favorite wine and food pairing would have to be a nice Cab and prime rib steak. It can’t be beat.

    The lighting is dim on this episode, but was fine on episode #497. hmmmm I hope to see more lights on the coming episodes.

    QOTD- Probably just because it’s what I’ve been enjoying most lately, spicy Thai , Indian or Chinese (especially curried shrimp, chicken and noodle-type dishes) with a nice Sauvignon Blanc (particularly the Mahi and Casa Marin, great recommendations!!).

    PS- As an audio professional, I agree with Rob P, audio quality has taken a significant quality hit recently- did you change microphones, did the in-camera mic limiter accidentally get turned on, or have you changed the audio data compression scheme?
