    QOTD- Probably just because it’s what I’ve been enjoying most lately, spicy Thai , Indian or Chinese (especially curried shrimp, chicken and noodle-type dishes) with a nice Sauvignon Blanc (particularly the Mahi and Casa Marin, great recommendations!!).

    PS- As an audio professional, I agree with Rob P, audio quality has taken a significant quality hit recently- did you change microphones, did the in-camera mic limiter accidentally get turned on, or have you changed the audio data compression scheme?

    QOTD: All time favorite pairing is probably one that I stumbled upon by accident. We had a bottle of petite sirah open, and that night I made some beet risotto. the beets pairing amazingly well with the PS, each of them bringing out new flavors and enhancing the other.

    As a general favorite pairing, though, sancerre is usually what we turn to. I’m a “pescatarian” (someone who’s usually veg but has fish/seafood), and sancerre matches up with many dinners around here.

    QOTD- I love Indian food with an equivalently spicy vino. Funny considering I don’t like my food too spicy, but then again spice, to me anyway, seems to cover up the flavors as chilling wine does. Anyway, ’tis all about the vibe- exotic wine with exotic food. Even better to me, though, is when a complex mixture of flavors can be attributed to the same source. (i.e, I rarely drink wine with food!)

    You should go to Swan’s Oyster Depot in SF when you are in town – we make it there every time. Pretty much an SF institution for oysters, crab, FRESH sea food….but it is pretty much just a counter with guys serving seafood n oysters behind it. But get there before 10:30 or so, or be prepared to wait in the 1 hour + line forming outside!!

    QOTD: While we’re on Sancerre…how’s about a salad of Asparagus w/a mayo vinnagarette & chopped boiled egg whites. Or, Thanksgiving dinners w/either a nice chewy Zin or a very earthy pinot. Or, or, veggy pizza and a kick-azz cab franc. Or, or, or..a well balanced and not to oaky chard w/some scallops. I could go on and on and on.

I probably need to spend more time working than running into wine stores, tasting every day, and watching archived episodes. Nonetheless, love what you are doing and glad to be going beyond my old paltry knowledge of wine. It is a delicious problem to have. Congrats on the upcoming 500th show!

    QOTD: This time of year, sitting on my roof in the still hot evening, eating a scallop salad with bitter field greens – lots of endive and frisse – with a warmed tart orange dijon dressing paired with a crisp white or rosé. I love a good Bandol rosé when it gets a tiny bit cooler and then I throw some bacon in the salad. So easy to put together and yummmmm.

    Great, great show for this time of season. I have been pounding the NZ SBs (as I am right now) but Sancerre is creme de la creme when it comes to the SB.

    QOTD: Goood question. Can I have a couple of them? The easy one is Pacific NW salmon (wild not farm-raised) with an Oregon Pinot followed by a scrumptious seafood paella I make paired with a Spanish Albarino and finally a deep-dish cheesy pizza with a Haywood Zin. My trifecta.

    And yes, the new wristband is totally rad. I want one. Your shipping dept is so quick they were not able to get a wristband into my latest order. I guess I need to order some Sancerre.

    Have a great trip to Bordeaux and finally to SanFran.

    I’ll be watching #500 tripped out on Percoset on Friday since I have “sports hernia” surgery at noon. Your show will bring a smile to my face an ease the pain.

    Cassoulet and Madiran, pizza and Chinon, steak and Gigondas. Oysters and Sancerre sound wonderful but when you’re 1200 miles from the ocean you can’t raise your oyster expectations too high.

    Great episode, tried an Oscar Brillant Sancerre as part of expanding my knowledge, still prefer the New Zealand Sauvignon Blancs.

    QOTD – One of the best meals I prepared was a Hot Italian sausage with onions, peppers, garlic, paired with Couly-Dutheil Chinon Cabernet Franc. Really good pairing.

    QOTD – Sancere (Cotat) with goat cheese on fresh baguette . . . perfection in pairing. I would say it rivals the oysters/Sancere pairing.

If you like the food and you like the wine, then you’ve got a good pairing. OK port and stilton cheese is a good pairing. I just had an angus beef burger and zinfandel and it was altogether fine!     Well I discovered that being allergic to mold, I should stay away from the reds. This broke my heart, as I have really developed a liking to some of them. Guess I will have to try more whites, which I usually do not enjoy as much. So today’s episode was great. Time for an old dog to learn some new tricks.

    QOTD: Not really sure I have a favorite pairing. I like most wines with just about any food. I would say though that cheese goes with wine better than any other food.

    Love the Sancerre show as well. One of my favorite wines. QOTD – favorite food pairing: so many to choose from; aglianico and salad with oranges.

    I love you guys, and only offer constructive criticism but, if you changed the sound system, the other one was better. This one sounds like a muffled 80’s TV show. The other picked up more ambient noise and was more fun, I loved the radio in the background sometimes Keep up the great shows!

    QOTD: If I had to say a “wine matching” I’d say New World Pinot Noir and the bath, I love drinking that stuff while lying in a tub of steaming hot water. Favourite “food and wine match” would perhaps fresh caught ocean fish and Australian Riesling or fresh caught trout and Champagne/Sparkling wine.

    I was trying to decide between chard and sancerre today … but I went for a naked chard (my first!) which I’m looking forward to.

    QoTD: All-time favourite? Dark (dark dark) chocolate and petite syrah. I love the combination of the spiciness and the tannins with the smoothness and richness of the chocolate … each brings some pretty serious taste, but neither is overpowered by the other.

    A propos of nothing … I was at Pike Place market today, and there were two guys giving high fives to everyone (including totally baffled old men) … Who else thinks the high five needs to come back?!? High five!

    OK, so that pretty yellow wrist band got me to de-lurk…

    Lost of pairings get me excited, but there’s something about the intensity of cheese combined with port or sherry that I find compelling, especially if there’s an assortment of nuts, fruit and so forth to go along with a wide variety of cheeses. With that on the table, who needs a main course?

    But I did have a nice Sandford Pinot Noir with fresh caught pan fried trout a while back, and it was superb.

    QOTD: I’ve always had a thing for coco tasting wines when paired with raspberry chocolate truffles. Last night, inspired by the Dolcetto episode, I strolled to the local Liquor Mall and picked up the Grimaldi. On the way back home I stopped into the sweet shoppe and grabbed four beautiful raspberry truffles and headed home to the lady.

    It made for a lovely Monday evening.

    Recently, I made Ostrich (rare of course) with Broccoli rabe and Escarole, finished it off with a great porcini sauce… I chose a Syrah (JC Cellars Estate wine)from Frediani Vineyard’s in Napa (06). The alcohol was a little on the heavy side (16.2%), decanted it for 3 hours. WOW! Outstanding. Lots of forward black fruits, and lingering to the end! On the mid palate, the wine was a little leathery, but it was a great pairing.

    QOTD: This is a pretty baisic one, but i spent time in spain in the summer of 2005, when i just turned 21, so my pallete was still very young, i fell in love with the pairing of manchego cheese and rioja. the subtle dry/nuttyness with a underlieing creaminess of the cheese was a nice ballance to the fruitiness and tanic back end to the riojas i tried while there.

    Try some home made Thai Satay sticks (made with fillet steak!), a spicy peanut curry sauce and a bottle of Venaccia di San Gimignano – a delicious crisp Tuscan white.

    If you like your steaks rare and unadorned, pair it with a Portuguese Red based on the Baga grape varietal. I like the wines from Luis Pato. Be prepared for a world heavyweight boxing bout though. Both are going to want to rule the show.

    QOTD: Either a crisp Pinot Grigio (say, from Chateau Julien) with shellfish or white fish, ora Bordeaux (or a Claret or anything in that style) with a great medium-rare grass-fed steak. A crisp pinot grigio pairs perfectly with a pan-roasted, lightly-seasoned filet halibut or tilapia, and works wonders with clams, oysters, shrimp, and crab. Yes, Bordeaux and steak is a standard combo, but it’s classic for a reason: it just works.

    Of course, there’s always red sangria and tapas . . .

    Thank you very much for saluting my country. Panama is a very nice place to visit and to live in. I’m proud to say that my local wine store sells 2005 Chateau Margaux!! The price is $1400. They also carry Chateau Margaux from other vintages at prices like $600, but to know that they carry the ‘05 since about two months ago makes me feel that this country is important. They also sell Petrus, Ch. Haut Brion, Ch. Latour, etc. Should come visit us some day. Thanks Gary.

    About 7 years ago on a cruise I tried a wonderful dessert wine, don’t remember the name but it tasted like apricots, tangerines & oranges. Very Sweet, but oh so good. Had it with a Grand Mariner souffle. Just call me the tooth fairy because I like my wine and dessert SWEET!!!
    Gary have you ever thought of hosting a Wine Themed cruise? But one night i went out to try this new steakhouse out, and tried a wine that i had not heard of before with my filet mignon and wow, did the two ever go together. I wish i could remember what it was, i’m sure it was a shiraz and boy did it ever have flavor. With the tender juicy steak and the massive flavor of the wine I was in heaven.

    I am in a wine tasting group that conducted a wine/oyster tasting experiment about a year ago. We had a couple of different varieties of oysters, and tasted them with several different highly regarded wines from: Sancerre, Chablis, Champagne, and Muscadet. To our collective surprise, Champagne was the general concensus as the best combination…and by a substantial margin. The crispness, minerality, acidity, and perhaps most of all the purity and cleaniness of the Champagne made the decisive difference. I love raw oysters, and now my wine of choice with them is Champagne….unless of course, I’m at the gulf coast where beer rules!

    QOTD: The best food/wine combination I’ve ever had was Chateau Yquem and Fois Gras.

    I don’t know if I have one – but enjoy crackers ( like wheat thins) with cheese or humus (garlic varieties) with just about any wine. Sipping some Argentina wine – La Posta 2006 Cocina Blend blend – Malbec, bonarda(?) & Syrah with the very exotic Wheat Thins….it’s ALL good !! Thanks for expanding my palate GV !!

    QOTD: I don’t go too complex when I cook (being a dude living alone should account for that), but recently been enjoying steak tips and sauteed mushrooms and white onion with a splash of worcestershire sauce and a healthy dose of red wine, and of course accompanied with the same wine used for cooking. Enjoyed a bold Napa Zinfandel (Napa Cellars 2005) with my little recipe a few days ago, and tonight an Argentinian Malbec with the left over beef I had frozen, same thing, and it’s exquisite for me.
    Of course, though, how can you say anything bad about pizza and a Chianto Classico (^_^;;)

    It may sound weird, but my all time favourite food pairing (and this goes back to when I started drinking wine and we used to have wine parties-1990’s) would be: Oven baked bread (country style) + a Bordeaux or Marques de Riscal + semi-sweet or dark chocolate (usually a Lindt or Michel Cluizel) with -and this is the weird part- Prosciutto and chipotle strawberry jam.

    Favorite food and wine pairing, Harbourne english blue goats cheese with a 2004 peller estates cabernet franc ice wine. i hosted a wine and cheese night last month and everyone is still raving about it! I’m pretty sure i’ll never get the opertunity to try this again, and alot of people in the world never will. I’m glad i have the oppertunity and if any of you do, dive on it. bout £50 for the ice wine, if you can get it. And the cheese is about £8 per 100g, if your in the uk. Wiered pairing but the flavours are unreal, i challenge you to beat it. If I ever manage to get the 2 in the room together again, the invite is there for you Gary, its emotional.
