    Cheese library makes me soooooo hungry! I’m going San Diego 34, Miami 14. I’ll be eating some triple cream and other stuff and drinking & finishing up a Gruner Veltliner (Leth), the rest of the albarino & syrah from the secret pack, and a Portugese red 2005 Grao Vasco. Have a great weekend!

    Love the cheese episode. I was eating prosciutto, stilton blue, saint louis triple cream brie, and a baguette when I clicked on WLTV and lo and behold, there sits Everett. Great timing….

    QOTD – Watching MLB Playoffs and drinking 2003 Tablas Creek Esprit de Beaucastel tonight. I was in the mood for something that rocks the house.

    everett, i live about 20 minutes north of petaluma, you should try point reyes blue cheese – one of my favorites along with humboldt fog goat.
    I’m drinking some of the galvs costieres de nimes which i got off free shipping – which i appreciate, but that wine was thumbs down. oh well, bring gary v, you the man.

    Great show. I’m an Oregon boy, so Tillamook is always nice. Other than that, I love Kerrygold and all other Irish cheeses. I had a nice bleu cheese from Ireland recently…

    Mmmm…mmmm cheeze. I love wine with cheeze. I find stronger, firmer goes with red better and softer, cremier cheezes go better with white. Maybe that’s just me.

    I’m not quite sure what I’m drinking yet for this week-end…going shopping tomorrow. My sommelier friend Bill got a couple interesting things like St-Estèphe and Fronsac and Bandols and what not. I’ve really been into Bordeaux wines lately both red and white.

    opening a 2005 Maybach this weekend. I know it’s a baby but I’ve been itching to try one? BTW, Everett are you supposed to eat the rinds or is it wrong not too? I like both the Mt. Tam and Redhawk but the rinds ruin them for me.

    Had my first Xarel-lo last night, was delightful! Tonight it wil be Manchego and tapas with a Ribera Del Duero, a Monastrell and maybe a Ca Meritage. Tomorrow, Black Cat Syrah and Laughing Magpie in Golden Gate park…probably more wine too

    I have two favorites. The best is probably a Tomme de Savoie that a fellow cook smuggled into the country from the french alps. Sick stinky gooey cheese. The next best was a young soft cheese that I had in Chile that was cured with Merquen, a chili spice blend.

    Those cowgirl cheeses look ridiculous!
