    OMG… this was difficult enough the first time on Ustream. Do I dare put myself through this again?! The only thing I remember getting out of this is that I’d much rather stay natural and use salt and lemon vs this stuff that I’m not sure I really want to put in my body. now the ‘05 bordeaux on the other hand… soooo yummy!

    This whole epi just had me thinking that Chevy Chase was doing an SNL skit spoofing Gary… just gotta find the light through it all!

    Entertaining show! Will keep an eye out for the “magic powder” . . . though I think the idea of just seasoning the food properly (sufficient salt and acid balance). Everyone’s just so afraid of salt and fat (texture and flavor) nowadays (low sodium this, low-fat that . . . )

    Only one wine? Asparagus? makes most #1’s smell funny. intense. Why was he not tasting the wines? Odd dude… Can you say “odd little dude?” haha. loved it! Viagra for wine… what a hoot! I get it, he wasn’t paid to taste… ha.

    I had a great Malbec tonight with home made pizza on the deck with wife – great weather in Raleigh.
    COME TO RALEIGH! Who do you want me to set you up with? smile. a wine store? nah. Savor Hospitality can host. I can get two Yadkinville wineries lining up the wines. A cooking/wine tasting with local NC wines.

    My wife is gonna be a new momma!!!

    The show was fascinating although Hanni seemed a bit odd. Why didn’t he hit the wine??? I don’t know if i would use the herbs/spice because isn’t the fun and skill in wine tied to the pairing and matching with food. When we get to the point of not needing to pair and try new stuff then the art might be lost.

    Might have to try the Gazin if i can find it since i’m in PA
    This state sucks!!

    I liked this episode better the second time around — good but not great. It kinda leaves a bitter aftertaste in my mouth, like a woolly suit coat. I liked the discussion on food science, especially when Hanni told us how to replicate his product (salt + acidity). While this episode had a nice attack and good mid-palate, that all-too corporate finish just isn’t doing it for me…84 pts.

    Interesting…loved the direct question. Is it BS? Gotta respect Tim though. He didn’t shy away from answering that one. I found the early stuff really fascinating – taste buds & hyper-tasters, etc. Not so much w/ the vignon, but it did make for a good discussion. Expanding our thought process.
    Mix it up Gary. Keeps us wondering what’s next.

    The guest was interesting, loved to see it. I went and took the test halfway through, after hearing the spiel, and I scored as a sensitive taster, but I think maybe I was too self-censoring, or my palate is too wide. I definitely take my coffee with cream, almost always, but not to quite the level where i dump a bunch out. I always seem to have the problem where I don’t have enough room for my cream, but I have had occasions where I have had too much room.

    Alcohol: Single-Malt Scotch/Irish Whiskey/Single Barrel Bourbons, Gin or Vodka and Tonic/Rum and Cokes. Kind of eclectic, but there it is.

    Going to have to ask my mother about when she was pregnant with me now.

    Very cool, awesomely interesting.

    Sorry, that was a really bad show. If I wan’t to watch commercials I can do it on TV. And I really enjoy matching food and wine according to my taste, so I don’t need this VIGNON stuff. That would just take away a lot of the fun and excitement of wine in general, which to me should taste differently with every dish you have it with.

    You did a great job gary. Your direct question if it is BS was great. And who doesn’t think that this whole idea is doomed to fail. Some sort of spicy salt for wine-nerds? Come on… Put this on your food and your wine tastes better. Ha! Finally I can eat my oysters with Barolo… :P
    And that he didn’t taste the wine and avoided to say anything about it, that turned me off – this guy treated your show like an commercial. But you stayed true to yourself and gave us your honest opinion. Kudos. Reminds me of that Clef du win show.

    Hey Gary and viniacs! I found super interesting this episode but I just wonder if this seasoning doesn’t kill some of the fun of “playing” with the matching of diferent foods and wines in the form of “one size fits all”.
    No matter the ingredients or the specific weight of the dish every wine suits.

    Interesting show. Informational and fun.
    Try some fried asiago cheese with wine – the salt and fat really makes for a great combination with tannic red wines. I think that salt and the parmesan is what makes the product do what it does.

    Somewhat interesting but it did come off like an infomercial. I have tried the Vignon seasoning within the last 3 months and I can’t really tell any difference. Artichokes still made my wine taste like a tin can. While his credentials are impressive, the product is much less so.

    In one point I fully agree with Mr Hanni. You can not drink most of the Bordeaux blends or similar kind of wines without a great meal. Otherwise those wines will overcharge your palate…… ;)

    Where to start…Well first off, my momma is Maria Dobercheck. She, along with me poppa, got me into wine about a year ago. I am forever thankful.

    A show loaded with info…It could have been an hour show and not have been too long. I guess it was posted too late for me to watch yesterday. Tim Hanni is a wealth of knowledge. So many things were brought up that are relevant to enjoying wine…I want to do the budometer thing now, but yeah, awesome guest and awesome show.

    Very cool show! I have found that certain foods just don’t go well with wine, and learning the science behind that is fascinating. And those “89 point” wines? I have had some killer ones! Especially when you get to know the reviewers palate. The thing that critic might knock a wine for may be something you love! Understand that will help you to figure out that what he rates as an 89 point wine, because he doesn’t like a particular component, might rate as a 93 point wine to you! I know Paul Gregutt (Wine Enthusiast), much like Gary Veeeeeee, isn’t an oak fan. I happen to like a bit of oak in certain wines. If Paul gives a wine an 89 with the reasoning that it is too oaky for him, that rating tells me that he thinks the wine is very well made and has lots of redeeming qualities. I then know, with remarkable success, that I will love that wine. So, bring on those “89’s”!!!

    QOTD – Marilyn. And, she hates wine…. come to think of it, she doesn’t drink anything except for Diet Coke and the occasional ice water!

    I truly enjoyed #558 with Tim Hanni and would have liked to have heard more about him and what he does. As you know you can be a bid rude at times when it comes to interupting others, as you did with Tim, and it looked like you were doing all you could to refrain yourself at times when Tim was talking. I know it’s your show but you should try and humble yourself a little more when it comes to this. Regardless I still think you do a great job and have a very entertaining show!

    Nancy. Love the guests, especially these outside-of-the-box types. Can you get Randall Grahm on?

    Two comments on the product. First, where can I get it? Second, from a marketing standpoint, it’s a really boring design. Make it look high end and elegant but not stodgy and old school. If I saw that on a shelf, I wouldn’t even notice it. A good test – would you wear a hat if it had the logo on it?

    Also (ok, a third comment), I’m sure they’ve done the market research, but it seems to me that at $5.99 you are competing with some low end garlic salt, Lawry’s sort of spices – not your market, obviously. You should be in the Williams & Sonoma crowd. Get that SRP up to $9.99 at least, maybe $12.99 and offer discounts. The people who will buy this thing are going to be willing to spend $10-15 as much as $6, especially if it is actually good.

    Again, where can I get it?

    I have not left a comment for a while. I have always in the back of my mind fantasized about being a Master of Wine. I was in the Wine business, and have always thought how great it would be to have such a credit. Not to be self-important, ( God forbid there are TOO many of those types out there.) but to just have that under your belt would be sweet. Not to mention I could probably land a sweet job. Anyway. For 6 or 7 bucks I would try this product, however I am a skeptic. It was just a bit much of a sales pitch. Hey – we all have one even if we don’t have a product.. hahaha.. Anyway good show. I need to back and watch some missed episodes. I am always keeping my eyes peeled for the free shipping wines..(I don’t have much dough.) and I did buy some of that 100% cab. Franc Italian wine and I wish I had nabbed a case. I was blown away. remarkable. I am too lazy to go the bottle. As always keep up the good work..

    OH NO – I forgot to mention my moms. I love her very much and she has developed a very serious pallet. I gave her a copy of your book and made her watch you show a few times. I gave her my sniffy sniff wrist band and busted out laughing the last time I had a few wines with her she busted it out and was wearing it and said ” lets have a sniffy sniff!..” She is a great woman. She used to old drink cabs. and now she is really in to Mourevedre. WOW! How cool is that.

    And I echo a previous post, why take the funky funk pairings outta your life? Me love artichoke and OZ shiraz. Although, I must say that using the salt must just add one more dimention. So, I flip flop and say this doubles your pairings. Eat the funky, taste the funk then eat and taste again with the Vignon. Awesomeness.

    Hi all and thanks for the comments. To answer some of the more prevalent questions and concerns: the reason I was not drinking is that I am a recovering alcoholic with 15 years sobriety. My contribution to the wine community is helping people understand why they like what they like, not trying to convince anyone you will or won’t like what I like. This being said I am on Council at the Institute of Masters of Wine (kinda like the board of directors) and formally mentor many people around the world trying to pass the exam. If you already have a way to go about ‘matching’ wine and food, you do not need Vignon – that being said it’s PRIMARY function is to make you food taste great. And it does. For the skeptics you should be but the science and more importantly the effectiveness is real. Gary did not flush anything out on the BS call – try a big red wine and then a little bit of salt and lemon or lime (like a tequila shot) and try your wine. Bitter suppression from the salt and sensory adaptation to the acidity in the lemon juice will render the wine smooth and delicious. The more bitter sensitive you are the more profound the effect.     I thought that this was a very interesting episode. I enjoyed it and learned a few things even!

    After I watched the video, I went immediately to budometer.com and took the test. I answered the questions as honestly as I could. I also have to mention that I am a wine professional (work in the business).

    My results were totally totally off! The type of wines they said that I preferred, were the exact opposite of what I drink, enjoy and prefer! “Big is better” – hell no!
    “prefer plenty of oak and power” – not a fan of oak at all; I prefer “naked” wines.
    “I’d just rather have red wine” – no way. I drink mostly white, in fact my cellar is 50% German Riesling!!

    What gives?! Did anybody else out there take the test and come up with results that were untrue??

    Hummm…..I would love an answer to this just to see if I did something wrong and to learn from these results

    Yo Vinosseur – the Taste Budometer is for people looking for a rough guide to the primary taste attributes they will enjoy the most. It is also an amazing information gathering and research tool. The less involved you are in the wine community the greater the accuracy. As wine professionals we get very emotionally involved and the psychological factors of numverous tastings, travel, learning, exploring, etc. rewire us neurologically. This is how humans ‘acquire’ tastes over time. You know what wines you love, like and hate and thus really do not need the Taste Budometer. Also, your preferences for salt and the way you take your coffee could have changed over time and skewed your results. A huge number of people find that it is a great way to wade throught the immense number of wines and zero in the the main factors so that they can consistently find wines they will like. As we say on the home page the more ‘into’ wine you are the less you need the Taste Budometer – you already have your system to find wines you like. Thanks for being game and playing and if you are ever out in Napa look me up!

    Ahaaa… firm believer in the non-food pairing BS, now confirmed! If restaurants were ’so worried’ that you would order the wrong food with your wine, then would force you to order the wine after you order the food. The opposite occurs as you know. And you never experienced a food-blow-up in your mouth when u had a bit of wine in your mouth and here comes the clams…

    Cool show Gary. Tim was kinda salesman on this one but you can tell he’s a genuine, down-to-earth guy, and it definitely got me wanting to try Vignon!

    I took the budometer test and came out as a “sensitive taster”… cool. I like salt and all kind spices, and when I cook I’ll really season with whatever I’ve got, not worrying much about combinations or measurements. Food and wine are really fundamentally so wonderful, and I think people overthink and close their minds to experiencing new things.

    QOTD: Darlene McHenry is my mom. She’s a beautiful, strong, compassionate and selfless lady, and of course I love her.
    She and her boyfriend tend to get stuck on their Blue Moon and supermarket white zinfandels and merlots, though, so my brother and I are always trying to get them to branch out! (^_-)

    It was interesting for me to hear about the MW certification. The seasoning sounds interesting (I’ll probably try it if I see it in a store), but I do love how certain wines match so well for me with certain foods. I know some pairings do not usually taste as good together, but I cannot imagine that a general use seasoning will replicate the magic of a seemingly perfect pairing. Even when it’s not quite that good, I really enjoy trying different combinations because some are better than others. I’m sure the seasoning doesn’t make everything taste the same, but it seems like it might take some of the fun out of the experience for me.

    Wow, it all makes sense.

    Diet Soda is the nastiest stuff I’ve ever tasted and I never understood why people liked it.

    I do shy away from table salt because of health concerns, but love the good stuff, particularly for grilling. Brazilian, French, Hawaiian, Alder Smoked, all in my cabinet and use them all the time to accentuate flavors.

    This was a good episode. Liked the vignon bringing back the wine after asparagus. However, you had a master of wine and didn’t even make him taste with you. My absolute favorite part of WLTV episodes with guests is when you taste side by side and compare notes. I love hearing what other people taste in the wines compared to what you taste. I think that you wasted a great opportunity. Get him back and let us hear and see him taste as well!!!
