    Awesome show even though every time you said Ribolla I heard Ebola. Also, I can’t believe you didn’t taste the food. Traditional spaghetti Bolognese and oh my gosh, that chicken under a brick looked delicious.

    QOTD: I have yet to go to Boston, but my dad wants to open a restaurant based loosely on a restaurant that just so happens to be in Boston, The Butcher Shop.

    Mike’s got it right…Italian food should be prepared simply with the freshest ingredients possible. Catch it, kill it, pick it, dig it up, cook it and serve it. DONE

    QOTD: I can’t remember the name, but it’s a Chinese restaurant in some industrial area that we go to whenever we’re in Boston. We’re the only people in the place who aren’t Chinese most of the time.

    First of all, the mAtt-ster needs to work on the camera focus a little, especially for the zoom-in shots. But it’s gotta be tough work behind the camera trying to keep up with Gary, so I gotta give Matt some credit.

    QOTD: I don’t know what it’s called, but we went to the Little Italy area for lunch at this small Italian place owned by this old Italian couple, and it was ridiculously good.

    QOTD: Hmm, I don’t get to Boston to eat much because Providence is so stellar or I head to NY. But I did enjoy Chef Schlow’s interview very much. I just wish you had a better audio rig for working with guests or on location. A couple of lavs, a tiny portable mixer, it wouldn’t be hard. I think I really would have enjoyed this episode more if the sound was better.

    LOved the show ! My favorite Boston (area) restaurant is Saporitos Florence Club Cafe in Hull, MA (20 mins south of Boston on the shore). The chef/owners are Annemarie and Eric Stenfors (grads of CIA Hyde Park, NY). All the best from Naples Kathy, formerly Boston Kathy aka Champagne Lady.

    CORRECTION: Well not really but I just wanted to comment that in the French wine documentary Mondovino (2006ish), which is an absolute MUST for any wine lover, James Suckling claimed bragging rights for the term “Super Tuscan” from a Wine Spectator publication back in the 70s I believe. So I’m just curious… is he stealing credit or is this disputed or was it just his article that had more of an impact, compared to Parker?

    Great show Gary, I LOVE the restaurant setting! And having a chef as a guest is a perfect match.

    I too started as a dishwasher, which turned into a busboy, then waiter. It was then that I discovered my love for wine, specifically Zinfandels.

    So doing dishes contributed to me getting into the wine business! Who’d a thought?

    QOTD: haven’t been to Boston for 31 years. I need to change that.

    Really loved the guest.
    I started as a dishwasher at my stepfather’s place. (hand-scrubbing pots).
    So, I really get what Michael is saying. You could not get a waiter job in fine dining so easy as it is now.

    I’m glad I had to do it the way I did. I do have some youngster w/ great work ethic though.
    But, you do also see alot of 20-somethings that believe $250-$300 a shift is their god-given right. Four hours for anything less is a waste of their time.

    I was in Boston for the Wine Expo 05.
    Sister lives there.(If you can call that living)
    We had so much fun. Smith & Wollensky was new & happening that yr.
    Zraly was at the next tbl w/ a bunch of prominent wine folks including many of the seminar speakers.
    I was a newbie to the sommelier scene so it was great.
    We went to some Italian place on the north side. Good stuff.
    BUT…THE GRILLED SAUSAGE AT FENWAY THE SUMMER B4 WAS THE BEST!!!!!!!

    QOTD: Via Matta does have a special place in my heart because it was where I celebrated my 19th birthday with my whole family, but not my favorite. Gonna go with either Mistral, L’Espalier, or Grill 23 if I’m in the mood for beef.
