    Difficult episode to hear with the room reverb. Interestingly, I had the Bressan Pinot Nero at Ombra in the Borgata last week and really enjoyed it. Went well with a veal ragu.

    Have only been to Boston one time in my life. I was 23 years old.
    That was 43 years ago. The chances that I’m going back again are kinda low.
    Did enjoy Chef Schlow.
    Out son is a celebrity chef, and while he does not work at restaurants, I can’t tell you how hard these people work. The hours are very long, initially the money sucks, and the student loans…….well, are student loans.
    But you can see the passion that Chef has for the food.
    I don’t know, maybe I will return to Boston some day.

    This is my first post. I just recently found this place after researching the speaker at a seminar at the Boston Wine Expo (which I took, and was very good). So how could I not post on an episode about Boston. Although I’m familiar with Chef Schlow I have yet to visit his restaurants, but look forward to doing so.

    My new favorite restaurant is Toro.

    My go to restaurant has been Artu’s in the North End (love the Balsamic Chicken), but Via Matta will be my next stop. I’ve seen that Brick Chicken before, but never tried it….it looks amazing!!

    Who the heck is this fakey-fake Mr. Chef? Unbelievable how some of these “top notch” Americans do not have any table manners or manners at all! I stopped watching this episode when this guy started speaking while still food in his mouth. Damn, what an idiot, and this guy is supposed to know something about food. If you don’t have manners and that certain finesse in everything you do… I never want to find myself in a restaurant with a Chef like this guy, I just know the food will be o-ver-pri-ced and pretentious.

    What a great guest! To be totally honest, I had never heard of him. I just moved to the Boston area (Maynard, MA), and don’t watch TV or follow food at all. I just cook what I’ve learned from home / college / San Francisco / Minneapolis.

    QOTD: None – I haven’t been around long enough to have a favorite. Definitely dropping by your restaurants now, though.

    QOTD: Just got back from our 1st trip to Boston (09′ Wine Expo) With only 4 evenings we had to choose wisely. We did spend and evening at “Great Bay” and it was phenomenal! From the service at the bar (Thanks Jonathan) to our dinner, this was our favorite night out. Order the Muscles!

    QOTD: Lived in Boston for 13 years, and there were so many great restaurants I remember but it’s been so long (1991) I don’t even know it they’re still around: Maison Robert of course, Grotto La Strada in the North End was one of my favorite Italian places, Portugese at Casa Portugal in Cambridge, Mexican at Sol Azteca on Beacon St,, and so many more.

    Next time I get to Boston I’ll make it a point to get to Via Matta. Looks like my kind of place.

    QOTD: I ran the Marathon there two years ago and went to a few restaurants that were really nice and low-key. Meaning: not too touristy and ones where the locals ate. I don’t remember the names, but, I do know that we stayed in a very, very blue-collar part of town and the food shops were all very neighborhoody…in a good way.

    QOTD: The only times I’ve been in Boston proper, other than for a Red Sox game (and fine dining is not on the agenda for that), has been with a batch of 5th or 6th graders on overnight field trips. I know we ate, but I have no recollection of where…
    Time for an adult field trip, it seems! Via Matta sounds wonderful.

    Wow you have a knack for comparing wines to food. This is my first time posting. So far i have watched 24 episodes and I wanted to say that you have me. Im in i have spent my time in 2008 devoted to wine. I have spent time drinking wines from around the world an I continue to come back to Spain. I would like to suggest a 2004 Tempranillo from Campo Viejo Reserva. I popped the bottle tonight and was amazed this was a new varietal that I tastes. I am 26 years old and very new to the wine world. By the way i would like to let you know that I am setting up and palate tasting for some friends of mine and then pair them to wines. I will let you know how it goes. When you talked to Jorge Ordonez was my first episode, loved it. You mentioned Muga but never got a response on it. I would love to know what you think of Muga, I have a 2003 unfiltered reserve in my cellar I love it.

    As a life long resident of Boston, I have had the pleasure of following Michael all along his journey here in our great city. I was working at the venerable Louis, Boston when he came to take over their Cafe. I was hooked and it hasn’t stopped since.

    Although my favorite spot in Boston is not a Schlow establishment(Jody Adam’s No.9 Park takes that title)I know that after a long trip away from home, whenever I return, a visit to one of Michael’s places really hits the spot!

    I was in Boston for the Wine Expo 05.
    Sister lives there.(If you can call that living)
    We had so much fun. Smith & Wollensky was new & happening that yr.
    Zraly was at the next tbl w/ a bunch of prominent wine folks including many of the seminar speakers.
    I was a newbie to the sommelier scene so it was great.
    We went to some Italian place on the north side. Good stuff.
    BUT…THE GRILLED SAUSAGE AT FENWAY THE SUMMER B4 WAS THE BEST!!!!!!!

    Really loved the guest.
    I started as a dishwasher at my stepfather’s place. (hand-scrubbing pots).
    So, I really get what Michael is saying. You could not get a waiter job in fine dining so easy as it is now.

    I’m glad I had to do it the way I did. I do have some youngster w/ great work ethic though.
    But, you do also see alot of 20-somethings that believe $250-$300 a shift is their god-given right. Four hours for anything less is a waste of their time.

    Great show Gary, I LOVE the restaurant setting! And having a chef as a guest is a perfect match.

    I too started as a dishwasher, which turned into a busboy, then waiter. It was then that I discovered my love for wine, specifically Zinfandels.

    So doing dishes contributed to me getting into the wine business! Who’d a thought?

    QOTD: haven’t been to Boston for 31 years. I need to change that.

    CORRECTION: Well not really but I just wanted to comment that in the French wine documentary Mondovino (2006ish), which is an absolute MUST for any wine lover, James Suckling claimed bragging rights for the term “Super Tuscan” from a Wine Spectator publication back in the 70s I believe. So I’m just curious… is he stealing credit or is this disputed or was it just his article that had more of an impact, compared to Parker?

    QOTD: Hmm, I don’t get to Boston to eat much because Providence is so stellar or I head to NY. But I did enjoy Chef Schlow’s interview very much. I just wish you had a better audio rig for working with guests or on location. A couple of lavs, a tiny portable mixer, it wouldn’t be hard. I think I really would have enjoyed this episode more if the sound was better.

    As Ed Sullivan would say, “a really fun, fun show.” I truly appreciate good cooks and one who has not forgotten their roots. Thank goodness he praised Bobby Flay since he is my culinary idol and all-around great guy.

    My ONLY negative comment would be that it is really disconcerting to see “Not Available” on such great wines. I feel frustrated enough with work and life in general and then when I get the chance to try some great wines, you say “not available.” Sounds familiar from the women in my life. :)

    QOTD: Unfortunately, I have never been to Boston. I took a business trip to Cambridge but did not stay long enough to try any restaurants. So my answer is “nicht.”

    Nice show! Awesome that the 2002 Bressan Pinot Nero worked out the way it did.

    I would have liked to have known more about the pairing as well. While I don’t necessarily choose my wines in restaurants to pair perfectly with food (sometimes I just want to sit with a wine through many courses and so I have time to think and enjoy it), it would have been nice to have known what particular aspects of the ingredients in the food drew you to choose the varietals you did. Basically, more technical things about how the food and wine play together.

    Great show. Chef Mike seems like the nicest guy you could ever know. I’ve been to Boston 4 or 5 times over the last 10 years and I absolutely love it.

    Gary, I gotta tell you, this show was like Kismit to me!!
    First: I have been thinking a lot lately about getting back to Boston, and I actually went on line TODAY to start planning my next trip.
    Second: I am from Fords, but all of my best friends lived in Edison, so I hung out there for most of my early years.
    Third: I am a HUGE Cowboys fan!! (…not to mention a HUGE wine fan)
    I would have given just about anything to be at that table with you guys.
    I will definitely find my way to Via Matta when I get back to Boston. I am also a HUGE bolognese fan!!!!

    Never been to Boston. Long drive from Sonoma county, that’s right Zin country!

    I had to stop the first time I started to watch this one as I thought Gary was going to talk all over the guest from the very beginning. I was glad I tried again as it was a decent episode.

    The sound however blew big chunks!

    Also how come you didn’t try the food parings? Just the fish and fennel. Next time have the kitchen bring things out as you move along, then it can still be hot, or at least steaming from the heat lamp hehe.

    Gary where’s your check list for the show, forgetting a bucket until taping is under way. Come on dude we know you can be more organized than that.You need a little “to go” kit for road shows. Like having camping gear all packed and ready for spur of the moment weekends.

    Thanks for continuing to fuel wine’s thunder.

    I lived in Boston for the better part of a decade, but I haven’t been back there in 20 years, so I don’t know if the restaurants I remember are even still around.

    I love Italian food, and spent a lot more time in the Back Bay than the North End, so Via Matta is just the sort of place I would seek out. I hear the Crunchy Eggplant is not to be missed, and it would probably go great with that last wine you tasted on this episode.

    When I think of Boston restaurants I think of seafood. Legal’s was always a favorite, but for a more authentic Boston experience I would suggest No Name or Union Oyster House.

    A fun episode, but I wish you’d tasted all the foods and commented more on how the wines actually paired with them.

    QOTD: I used to live in the Boston area but moved away 20 years ago. Most of my favorites are no longer around. Some favorites that are still there are L’Espalier, No Name, and Mamma Maria. One long-gone favorite that I remember most fondly was Le Bourguignon in Dedham, a great Provencal restaurant that had a cellar full of 1969 Burgundies that they sold at affordable prices (based more on what they’d paid than what they could get, I think).

    Fan-freaking-tastic episode! I wish I could’ve met Chef Schlow- he and GV looked like they had a lotta fun. Plus, the food looked good. That chicken under a brick sounded fabulous.

    QOTD: Well, I’m a simple girl and I like the little hole in the wall restaurants in the North End. I go to the ones that *don’t* have valet parking. There was an old pizzeria that I used to go with my family that has since closed. The pizza was so good. Salivating now.

    Everything Movia is very much Slovenian (from the town of Ceglo in the Brda region – the eastern part of Italian Collio), except that some Slovenian winemakers also own land across the border in Italy. Besides that, there are lots of better-QPR ribollas (”rumena rebula”, as we call it) compared to Movia’s available here in Slovenia :)

    Additionally, a part of Istria also belongs to Slovenia, but you will not find ribolla there. That is primarily the land of malvasia (”malvazija”) and rifosco (”refošk”).

    >Trst zaj nas!

    The correct wording is “Trst je naš”, meaning “Trieste belongs to us”, a nostalgic Slovenian mourning for losing Trieste and the surrounding territory to Italy after WWII.

    Having said that, it is nice to see the first Slovenian wine tasted on WLTV. Hope more will follow ;)

    We import the Bressan Pinot Noir into the Czech Republic. As Fulvio Bressan says, the mark of a true winemaker is making a good wine in a bad year. It is a stellar wine. And, one should try the pinot grigio, pignol etc. :)
