Awesome episode and great guest. I serve Absinthe tableside in the traditional manner where I work, and guests get a kick out of it. Definitely an underrated digestif that still has a slightly tarnished reputation from all the stories Brian mentioned, so I love turning it on to guests.
Qotd: If we're going with a contiguous area, wouldn't that be Australia? I'm guessing Chile would be #2

Pastis: 40-45% alcohol, sugar added in the production process (liqueur), licorice root regularly used, no Grand wormwood, star anise-heavy.

Absinthe: 50% alcohol and higher (stronger concentrate, needs to be watered down more), no sugar added in production (liquor), licorice root rarely--if ever--used, Grand wormwood used (the minty bitterness, which balances the sweetness of anise and fennel, kind of like hops balancing malt in beer), green anise-focused (though some producers use star).

Both are distilled. Enjoy the exploration! I've found there is a remarkable variety of flavor to be found within the category of traditional absinthe. :)

Fascinating show - very educational, very interesting. I doubt that I would actually like Absinthe since I am not a big licorice fan, but still a very nice show. And Gary generally let the guest do most of the talking which was nice for a change. :-)
