Wine Pairings with Jordan Salcito of Momofuku
When order wine at any of the Momofuku restaurants, you know you’re in good hands, because their beverage director, Jordan Salcito, has basically done it all. From Somming at Eleven Madison park, to harvest in Burgundy, to GILT, to having her own wine brand, Bellus, Jordan is one of the most rounded talents in the wine industry. So of course it’s no surprise that she now runs the wine program across David Chang’s modern food empire.
We caught up with her at Ma Peche shortly after they introduced their new dim sum program and, along with that, the super-cool “56 Wines for 56 Dollars” list (which we’re in love with). She told us about some of the logic behind the program, and from there we ended up jamming on some of her favorite, most versitile wines to pair with food. Ok enough reading, more watching.
