    Only two more days of matzah! (Not including today)

    Just in case you’re getting sick of regular old matzah, here are some recipes you might enjoy (my family like’s ‘em!):

    Passover Rolls (Grandma Bev’s recipe)

    2 cups matzah meal
    1 tsp salt
    1 Tbl sugar
    1 cup water
    1/2 cup oil
    4 eggs

    Combine first 3 ingredients. Boil water and oil together. Add to dry
    mixture. Beat in eggs, one at a time. Let stand 15 minutes. Shape into small
    balls with oil on hands and place on greased sheet at 375 for 50 minutes.

    Fried Matzah (Grandpa Mort’s recipe)

    1 egg for every 1 1/2 matzah
    oil
    water
    salt
    pepper

    Crack matzah into 4-6 big chunks. Fill bowl with cold water. Immerse matzah
    and immediately drain. Mix eggs, salt, pepper separately. Then coat matzah
    in the mixture. Put oil in the pan and heat on medium high till it bubbles
    through the matzah when you test it. Put matzah in the pan and cook till
    golden brown & crispy. You can keep it as a pancake or break it into pieces
    as it cooks. You may want to sprinkle more salt when eating it.
