    Sad day in DC. Read that Eddie Brinkman died. Yet another Washington Senator. Great fielder……. couldn’t hit for squat.
    Again, I enjoyed the cheese show. We pair quite a bit with cheese’s, and I was interested in what a few more days would do to their flavor. Expected results.
    QOTD………………….pass. (don’t find football interesting. Or for that matter, basketball and baseball). Having said that, I am following James Madison Universities football team, as two of my sons graduated from there several years ago. JMU is currently ranked #2 in Div. 1AA, and, oh yeah…doing pretty good).

    I have two favorites. The best is probably a Tomme de Savoie that a fellow cook smuggled into the country from the french alps. Sick stinky gooey cheese. The next best was a young soft cheese that I had in Chile that was cured with Merquen, a chili spice blend.

    Those cowgirl cheeses look ridiculous!

    Mmmm…mmmm cheeze. I love wine with cheeze. I find stronger, firmer goes with red better and softer, cremier cheezes go better with white. Maybe that’s just me.

    I’m not quite sure what I’m drinking yet for this week-end…going shopping tomorrow. My sommelier friend Bill got a couple interesting things like St-Estèphe and Fronsac and Bandols and what not. I’ve really been into Bordeaux wines lately both red and white.

    everett, i live about 20 minutes north of petaluma, you should try point reyes blue cheese – one of my favorites along with humboldt fog goat.
    I’m drinking some of the galvs costieres de nimes which i got off free shipping – which i appreciate, but that wine was thumbs down. oh well, bring gary v, you the man.

    QOTD: Found a nice little Spanish wine called Care (50% Syrah, 50% Tempranillo) from the Carinena region for only $8. Quite nice, especially with a little decanting.

    Isn’t baseball just a bunch of fat older guys who can’t run? At least with football you know those guys are breathing hard.

    Drinking a Conde de Valdemar Reserva 2001. It’s got the Rioja earthy, fresh cow manure thing in spades, but it’s also fairly acidic with a backend bitterness. Not overly pleasant as a cocktail wine, and it didn’t really stand up to my New York strip either. I’m guessing there’s a good pairing for this bad boy out there, but it’s not on my table.

    Love the cheese episode. Would like to see more wine involved, but it’s cool to hear more about the stinky goo. Have always enjoyed cheese, but have not expanded my pal(ate) in that direction, usually stick with the fairly obvious stuff, even when I dabble in the gourmet section. You have inspired me to try something new this weekend….

    Really enjoying the cheese episodes. I had Cowgirl cheese once when I was living in Rhode Island from a wonderful cheese shop in Providence. I fell in love with it. Thanks for reminding me how good it is. I must go out and find some here in California.

I am very excited about this bottle. i have little german riesling experience, but i have been luvin the riesling from alsace over the past year. wooo

    It is nice to see you highlight Cowgirl Creamery. I have a friend Bill Conley whose sister Sue is one of the founders. His favorite cheese is also the Mt. Tam. They have a retail outlet here in downtown DC. I need to find your Tarragona Vi de Nulles Blanc and enjoy your find with some Mt. Tam after proper ripening. Good man Everett.

    I had a wonderful Pinot Noir from Russian River Valley by Walter Hansell, Cuvee Alyse. Probably will open a 2001 Catena Angelica Merlot if the Redskins can overcome the Philly faithful. They egg the team bus and throw batteries at the players. I hope that just motivates the Skins. We softened the Cardinals up for you so you owe us. I told you Brett would be accurate with his gun but 6 TD’s is overacheiving by the future Hall of Famer.

    I drink mostly red wine so I like harder cheeses like Manchego and Reggiano.

    Keep up the good work Gary as the diversity of the wine world is its strength. South Africa is making quite a stir at the Decanter world awards in a way that reminds me of when Napa had its coming out party in the judgement of Paris. I need to explore that area more. (hint)

    Fun episode and you definitely need to do more Cheese Library shows in the future with Everett. I also liked the inclusion of a wine – more in keeping with WLTV.

    QOTD: Lock of the week? Well, neither the Browns nor Jets will lose this week. :-)

    This weekend? Well, Friday night we went to Hyde Park Steakhouse in Cleveland and we had a bottle of 1996 Clos du Val Cabernet that was pretty nice. I always like getting older wines, especially cabs and this one was pretty decent. It still had good fruit and a nice smoky bacon and licorice component. Then we had a bottle of Blackstone Rubric red blend from Sonoma. I didn’t care for it, although the mixture of grapes (which included petite verdot and tannat) was interesting. Unfortunately the wine was rather boring and was medium bodied at best. The waiter recommended it, but I certainly wouldn’t. Last night I was on the Newark to Geneva flight so I had a 2006 Corbieres that was quaffable enough. Tonight we are probably going to the pizza restaurant near our hotel. We are likely to have a Montepulciano d’Bruzzi or a Nero d’Avola with various pizzas.

    MMMmmmm..the close-up on the gooey cheese definitely made me hungry for some cheese on today’s agenda. I purchased some roaring 40’s a couple of weeks ago and haven’t attacked it. Might drink it with some Jersey port or the Gourmand from the Secret Pack. Opened a 2003 Alcina Cellars San Giacomo Vineyard Pinot last night–tasted more black raspberries yesterday with a little sweet-tart. Today more black cherries, nestle-quik powder, the finish wasn’t as long, slightly floral, meaty, celeriac. Nicely balanced enjoyable wine, excellent with the breaded pork chops. Depending on what I decide to make for dinner, I was kind of in the mood for an Aussie Shiraz. I’ll have to check the cellar and see if I have one. May have to pick up that order from WL. And no it definitely won’t be Yellow Tail—never has , never will be.

    Here in the restaurant i work in at napa we carry a line of cow girl chesses I’m a huge fan and the red hawk has been a feature on our artisian cheese plate. It’s an awesome cheese. It’s also nice to get these cheese/beer/other breaks in the wine too, granted i do love win.

    Delice de Bourgogne, Pyrenees plain cheese, tre signori goat milk cheese. This show made me purchase these cheeses. I know very little about cheese but since the earlier episode and the Spectator’s recent issue, I have been experimenting. Like WineWoman said, it was the close up that hooked me. Good Cowboy watching food (although I almost choked on it when Bengals cut lead to 24-22. )

    We were just in San Francisco and we saw the Cowgirl cheese but decided against packing it in our luggage. Also, I’m not a gooey cheese person. We packed up 5 bottles of wine from Copain, Donatiello, and Sheldon Wines instead. We met Stuart Ake at Crushpad and had a very educational and fun time. You should have him on the show – he has a very different slant about wine tasting.
    QOTD: We went to Strait (fusion) in San Francisco and had a Dr. Loosen Riesling and a Trimbach Gewurtztraminer with some very spicy food. We didn’t really drink much in Russian River, but we tasted Arista, Gary Farrell, Torres Estates, Porter House, and the above wines.
    We had a couple of glasses at a couple of bars but I can’t remember the wineries any more.

    Gary, I’m the home vintner, and I’m drinking whate is called poully fuisse but the box says Rouuso Blanc, anyway since we can’t buy good cheeze here in the hinterland, but we can make our own wine. This white has not been my best, I start drinking it befor it’s ready, but those of us who make wine at home, and there will only be a few, want your imput. Love to brinkg my wine onto your show.

    I went ahead and had an Ile de France herbed brie and pared it with a Bogle Sauvignon Blanc. The cheese was good, and the Bogle was nicely acidic to cut through the creaminess. Still, I think my $2 Tisdale Chardonnay would have worked well too.

    I want to answer the question you posed at first – what’s your favorite cheese. I’m from St. Louis so it’s gotta be PROVEL, baby!!! Slap that on some pizza in place of mozarella, and you’ve got “Soup on a Cracker” as we call it here (i.e. Imo’s). St. Louis is so crazy about provel cheese on pizza that the DiGiorno Pizza that is sold at the ball park (Busch Stadium) has provel instead of mozarella! LOL.

    Another great episode!!!

    BTW, since the Rams suck, I’ve decided to become a Jets fan!!! GO JETS!!!

    Bears came out in salvation mode for chicago – that was nice.

    I had 2005 L’Ecuyer de Couronneau from Bordeaux – talk about some sheep butt! at least when the bottle was fresh opened – after decanting the wine took on a whole bunch of great flavors and subtlety that was a lot of fun.

    Last night we had open a Rioja Tempranillo – Baron de Barbon that was really fantastic with one of the most dynamic aromatic offerings I’ve ever enjoyed in an $11 bottle.

    Watched the show and read through the comments. Couple things … #1 Go Jets. #2 The casual Friday idea that was posted was a good one. I get to visit your store every so often and every time I go in I get a big smile and lots of help. However, I’m sure there are a lot of people would like to meet the fam. You should have the cheese guys stop by and maybe a beer guy too to have a baseball card-reading, wine-tasting, cheese -smelling good time every so often. #3 I think Everett should never be allowed to “put a razor” to that beard. You could hide something in there it’s so fluffy. Wonderful.

    Third, QOTD1: guess it’s a little late, but I bet…err, picked…Houston and Philly FTW.

    Fourth, QOTD2: a friend just brought over a few bottles as a semi-housewarming (the GF just moved in). So we’ll be trying Castle Rock Petite Sirah Russian River, A to Z Riesling, and (almost sad about this one) Bitch Grenache (with a pink label and all!).
