    Gary – Entertaining as always. Couldn’t break into the Le Pin huh. I wouldn’t ruin a classic by drinking too early.

    As a sit here trying to figure out what is wrong with my 7 out of 12 bottle of 2003 Georges Duboeuf Julienas Prestige….. That leeds me to my next idea…. How about a blurb on Beaujolais? They were put back on the map with 2003 vin, and then they have dissapeared again? I am glad that I stocked up, as for the most part, I believe they are the fruitiest thing out there & 13.5 – 14% alc and one would swear it was 11%. ALL THIS FOR $8-$15…. AND LAST 2-5 – HOW CAN A GUY GO WRONG???

I have been pairing with every wine I drink to see what happens and it AMAZINGLY works with the big reds. The darker the more cocoa flavors the better.. Give it a shot!

    GV – I too would love to see an apartment cellering episode.

    Right now I fould some wire wine racks that fit perfect in my closet on shelvs that are already there the only thing I cant finger out is how to control the climate, is not like I can cut a hole for an AC unit.

    SOAP – 17 mill. and I think the gist of it is supposed to be so over the top corny that its ok. I wont go see it though I wait for DVD on everything.

  • So…I’m bursting at the seams in my house. My 54 bottle wine fridge is full and my 4 cabinets are filling fast. I’m thinking about puting a 300 bottle Vinotech in the Garage, but not sure if this is the route to go. Anyone have any suggestions on Wine Storage Units, and / or alternatives?

    Buy space for at least TWICE as much as you think you’ll need. You will accumulate more iwne over the years than you expect. I bought a 300 bottle vinotemp – still have it in the house to hold my immediate needs- but have now also rented an external wine locker for my long-term aging cases. Tough to stop buying with so many regions having spectactular vintages year over year. Not like in the old days (a decade ago), when Napa and Bordeaux and Burgundy and Spain and Port would have a great vintage only 2x a decade.

    ?s for Gary and anyone else who wants to jump in: do your wine appetites change as the seasons change? Also, when you were first learning about wine, did you stick with one varietal for a month or two until you really understood it inside and out, or did you jump around from grape to grape? I am wondering if I will learn more if I stick with one varietal and try LOTS of different ones over, say a month’s time.

    Jason R – Chocolate is one of the best things to pair with wine. If you really want to be blown away, pair it with a nice port. One of my favorite pairings is a chocolate flourless cake topped with raspberries and port.

    Douglas – My tastes definitely change with the seasons, more reds in the winter, more whites in the summer. When I first took a wine appreciation class in college, we stuck with the big 6 my prof picked. I stuck with those a while, but now I crazy adventurous and will literally try anything…

    I just went through the wine fridge research thing and after much comparing and message board advice, I went with the EuroCave Comfort that supposedly holds 260 bottles, and love it. Of course it will only hold 260 if every bottle is the standard Bordeaux style, so hopefully you don’t like Pinot, Riesling, or Port.

    There are cheaper units available, but they’re never rated as good and after reading fine print some you actually have to assemble yourself. Come now.

    Check out Wine Enthusiast website–they usually have deals going on.

    Remember, it’s all about temp, humidity, and vibration control.

    Did someone really say Snakes would bring in $63MM this weekend???? Did you mean $63,000?
