    P.S. Yes, I’m a lurker – only past two months – but can’t believe how great the show is. I saw the wine cellar episode, would love one on the good, bad and the ugly of wine chillers, which is a more affordable option for many of us.

    Medium, no more, no less. Seared in a cast iron skillet. Three minutes per side. With roasted garlic or shallots, vino sauce, roasted potatos. Damn, I’m getting hungry.

    Rub both sides with extra virgin olive oil, grilled, with a little salt and pepper. Serve medium rare. Beyond that, there’s no reason to have steak.
