    My favorite Steak is a Bone in Ribeye Medium Rare, straight up!!!!! I also love Bone in NY Strips, MR. If I have a filet, I love it to be Oscar style. At my restaurant , Shaws Crabhouse, we serve our Oscar Filet with 3 oz of Fresh Alaskan Red King Crab. Medium Rare of coarse!!!!!!

    QOTD: Sea salt and freshly ground black pepper, seared and caramelized on the outside, but purple and just slightly warm on the inside. I can do this to perfection with just a trusty stainless clad saute pan and my stove. I prefer the smoke from a mesquite fire, but it’s just too unpredictable to get it right so I hardly bother.

    Oh yeah, QofYesterday:

    Tuscan Steak
    Four 24-ounce bone-in rib-eye steaks
    2 tablespoons sea salt
    1/4 teaspoon each ground allspice, cinnamon, nutmeg, and cloves
    1 tablespoon freshly ground black pepper
    2-4 tablespoons extra virgin olive oil

    Preheat grill to its highest setting, or preheat broiler.

    Combine salt, spices, and pepper, mixing well, and sprinkle half of the mixture onto one side of the steaks.

    Brush the grill with some of the olive oil. Place the steaks, seasoned side down, on the grill and cook for 4 minutes, until a dark brown crust forms.

    Season the steaks with the remaining spice mixture, flip the steaks, and grill for 4 to 5 minutes for medium-rare.

    Remove from the grill. (If broiling, follow the same instructions, but start the steaks seasoned side up.)

    Let steaks rest for a few minutes before serving.

    Drink with a Sangiovese or Aglianico based wine, or a decent Bordeaux.

    I hate to sound like Rachel Ray here…But the best stake is cooked medium, salt, peper, and fresh rosemary and sage !!!
