    Not sure of the biggest change, but I’ve had several Bordeaux’s change drastically over 24 hours. Some wines I’ve opened I’ve brought to blind tastings and couldn’t recognize them anymore…

  • Dang it, I totally had the birthday question before the comments link was even there… With this live ustream thing, those people have a decided advantage against the rest of us, cause they’re just sitting there waiting for the show to appear… so that’s kind of like cheating!

    QOTD: On the plus side, it was the 2004 Clos Marie Coteaux du Languedoc Pic St. Loup Simon that you recommended during the 12 days of Christmas. It was barely an 88 point wine that tasted like aluminum foil on day one when I had just one glass, but three days later (crap, you said just one day?) when I went back to it, it was a 92 point wine, full of Christmas spices and tasted like thanksgiving dinner. Damn it was good…

    The biggest change in wine I have witnessed after decanting is definitely the 2006 Hilltop Winery Királyeányka Craftsman. It was a $9 buy @ K&L in San Francisco and after being in the open bottle for a while, it turned into a $25 value with much greater complexity and more interesting fruits.     QOTD: 2005 Hewitson Private Cellars Shiraz tasting notes:
    Had a 2005 Hewiston “Private Cellar” Shiraz Mourvedre (75-25%) over two days and I think that it might be something special. The first day I was torn. I thought that it had a good bouquet but was somewhat disappointed with it’s taste considering all the hype it had (James Hallidayâ??s Australian Wine Companion 2008 Edition equal top wine with the 2002 Penfoldâ??s Grange that sells for $500). I had let it breathe an hour before drinking and it was probably open another two hours while I was drinking 2/3 of it. I rescrewed the cap and left it for the next day. When I came back to it, it had lost some of itâ??s bouquet but the flavors of extracted fruit were pretty incredible. I am beginning to understand what balance is and this bottle certainly had it. Nothing was overpowering and a good word to describe this wine would probably be unctious. If you wanted to drink this wine in the near future rather than wait the suggested amount of time (2010) I think that I would either decant the wine a couple of hours before I wanted to drink it or at least let it breathe in the bottle for 4-5 hours. I think it will be worth the 3-5 year wait.
