I’ve never seen that done before and while I had heard of it, I really didn’t understand the concept until I saw it demonstrated here. Now it makes perfect sense. Although you spilled quite a bit, Gary. 😉

    Sabering Champagne, as one version of several legends goes, originated when the pre-teen Charles Heidsieck accompanied his father to sell bubbles to the Russian Czar in the 1800’s. As a point of honor and trust, the Czar commanded the boy to stand forth and hold a bottle of bubbles outstretched in his hands and he did so unflinchingly when a royal guard hacked off the cork with 1 calculated stroke of his sword. The wine was tasted and the first order placed. Some say also coincided with high levels of dosage as the Russians liked their bubbles sweeter.

    Another version sites Mme. Clicqot giving bottles and glasses to victorious (???!!!) returning mounted soldiers with Napoleon that did not dismount so they threw the glasses down and hacked off the corks and drank from the bottle…
