    Dang it, I totally had the birthday question before the comments link was even there… With this live ustream thing, those people have a decided advantage against the rest of us, cause they’re just sitting there waiting for the show to appear… so that’s kind of like cheating!

    QOTD: On the plus side, it was the 2004 Clos Marie Coteaux du Languedoc Pic St. Loup Simon that you recommended during the 12 days of Christmas. It was barely an 88 point wine that tasted like aluminum foil on day one when I had just one glass, but three days later (crap, you said just one day?) when I went back to it, it was a 92 point wine, full of Christmas spices and tasted like thanksgiving dinner. Damn it was good…

    The biggest change in wine I have witnessed after decanting is definitely the 2006 Hilltop Winery Királyeányka Craftsman. It was a $9 buy @ K&L in San Francisco and after being in the open bottle for a while, it turned into a $25 value with much greater complexity and more interesting fruits.     QOTD: 2005 Hewitson Private Cellars Shiraz tasting notes:
    Had a 2005 Hewiston “Private Cellar” Shiraz Mourvedre (75-25%) over two days and I think that it might be something special. The first day I was torn. I thought that it had a good bouquet but was somewhat disappointed with it’s taste considering all the hype it had (James Halliday’s Australian Wine Companion 2008 Edition equal top wine with the 2002 Penfold’s Grange that sells for $500). I had let it breathe an hour before drinking and it was probably open another two hours while I was drinking 2/3 of it. I rescrewed the cap and left it for the next day. When I came back to it, it had lost some of it’s bouquet but the flavors of extracted fruit were pretty incredible. I am beginning to understand what balance is and this bottle certainly had it. Nothing was overpowering and a good word to describe this wine would probably be unctious. If you wanted to drink this wine in the near future rather than wait the suggested amount of time (2010) I think that I would either decant the wine a couple of hours before I wanted to drink it or at least let it breathe in the bottle for 4-5 hours. I think it will be worth the 3-5 year wait.

    QOTD : Chateau Les Farcies Du Pech (2003) from Pecharmant in Bergerac.
    (Cab sav 40%, Cab Franc 30%, Merlot 30%)
    At first it smelled really gamey, and a bit sickly, which was ok. On the palate though, it was dominated by oak – and charred oak at that – old world oak monster rather than new world oak monster. It did give it an amazing frankincense type component which was new to me. Overall it was really well balanced, though was lacking in the fruit department.
    On day two (I usually drink wine over 3-5 days), the stinky funk and oak had really integrated, and the fruit had emerged, making it an utter pleasure (though I do think I missed the peak, probably around 12 hours after opening).

    QOTD: we had a priorat the other day that changed dramatically with some airtime. When I first opened the bottle, the wine had this funky nose of spoiled-raw-meat-sitting-in-the-sun-at-the-junkyard. I couldn’t even approach the wine until that blew off a few hours later. Then the wine became all about dark chocolate and black tea. The next day, we felt the wine had notes of both dark and milk chocolate, and the tea was replaced by some notes of sweet cigar. Very interesting.

    BTW, I have one of the old-school black wristbands. :)

    QOTD: Definitely the 2001 Cooper-Garrod Cabernet Sauvignon Santa Cruz Mountains I had recently. Was at best a 77 on the first night and legitimately tasted like liquid oak, it was almost undrinkable. Left in decanter overnight, and the next night the oak had dissipated almost completely and it was easily a 91+ delicious, smooth cabernet. Tasted like a completely different wine.

    Great show today! Liked the re-taste after the 20-something hours.
    QOTD: Can’t remember the year, but I believe it was a young Ridge Lytton Springs Zin. Tannic oak monster was in my face when we first opened it, but after a night of airing (too much oak to start with, so there was little pleasure in drinking it the first night) the fruit opened up, tannins were manageable and oak monster moved into the background.
    BTW, The Thunder show must start with the energy that you bring with the intro! Don’t change it please!

    QOTD: I have to say that if there was a wine that I didn’t like, I have not displayed the patience to let it sit for 24 hrs and try it again. However, I do currently have a bottle of wine that I had tried and HATED it, but will decant it for 24hrs to see if it smooths its extremely razor sharp edges.

Gary you need to come to my garden, and get it straight. i got it all, 2 varieties of black raspberries, 3 of red raspberries, cherries, pears, plums, mulberries, aaaaand violets and lavender among other things. Heck you need to start your own garden, maybe even a wine library garden! yeaaaa a wine library pallet training garden, you could pretty much grow everything you talk about except big league chew! I dont care if they shipped in french soil and water, got the best clones and kidnapped the best french growers and winemakers, ITS STILL AUSTRALIA (mate). $60 should be their limit. Period (.)

    QOTD: The biggest change from one day to later was 2005 Bodegas Arrocal Ribera del Duero, severly disappointed in it the first day and then went back 2 days later and it was rocking.

    QOTD: Castello D’albola Chianti Classico

    Tasted like straight weak ass after uncorking. Decanted, let it sit overnight, the next day was 100% better. Firmed up, mid-palette seemed to fill in, fruit became more pronounced and tannic bitterness was softened quite a bit.

    About your views on the Grange, I have 27 bottles from 1998-2002. I have only had the 2002 and must say, while I can’t stand overoaked wines relative to fruit, the 2002 did NOT seem out of balance with oak. You might want to mention that better vintages might hide the oak more, just my thoughts. Also, you should try these 2 wines again the next 2+ days or until they’re dead for informative fun.

    Biggest positive change in 24 hours:

    Eberle, “Côtes du Robles” 2006; Syrah, Mourverdre, Grenache, Voignier, $20

    After about 30 minutes of breathing, this had a nose similar to a really nice New World Pinot Noir. I found the taste to be quite dry and elegant with good tannin structure, but I felt that it needed another year or two. Still, there was very nice fruit even though it was definitely tight.

    The next day, this wine transformed into a deep, lush, smooth talking powerhouse, and among the dozen various bottles of good stuff on the table, this was everyone’s favorite.

    Love it, love it! Great show. I’m ecstatic you still hated the Grange. No wine will change that much, well, maybe.

    QOTD: On the plus side, let the ‘05 Haywood Zin Los Chamizal sit overnight and it becomes not just a good bottle of wine but an amazing one. Wow.

    On the negative side, ANY Champagne, degrades abruptly no matter what system you use to try and preserve it for next day consumption. I drink the entire bottle that day else chuck it.

    qotd- had a donjon pape out for 2 days and still showed quite well I suppose the oxidized flavor had to compliment the overall structure.
    A shout out to Justin at Alinea here in Chicago, where we had some great wines (detailed on the blog) – the Joly savionaire especially. A request for a future show on Biodynamic wines, the ones we had at dinner were great, and I recall a Gwerz that I loved that was BD – but what do I know, let’s hear from the V!

    QOTD: Biggest changers for me have been with ports – 10/20 year old tawnies even som LBVs. They open up so nicely after a couple days is the wine cooler afert being popped.

    Gary, thanks for not looking to the side every 30 seconds. Much more enjoyable to watch!

    Almost EVERY bottle of red wine in my opinion tastes better the next day. But you have to keep it in the fridge. Just pull it out an hour or two before drinking.

    Quite often I plan ahead and open a bottle of what I want to drink the next day, drink a glass to allow some room for air in the bottle, then put it in the fridge for 24 hours to blossom into a much better wine. Its like decanting times 10.

    A 1996 Clos la Coutale Cahors – first day uniteresting and flacid…decanted let sit a couple hours, showed some fruit — forgot about it went to work next day came back home (26hrs from first opening) found the decater uncovered on the counter, tried it and BAM! Awesome expression of roasted coffee, cocoa powder, lavendar, rosemary, thyme, black currant, dark blackberry, bright cherry, little wooden wagon with overused rubber tires… on and on and on….drank like cahors can and often does.

    ALSO I believe it’s STINKOR not skunkor Gary! Looked it up and i’m bidding on an original in box now. you can get second series in box ‘buy it now’ for about $30 + shipping….but i’m going for the OG

    99 Molettiere Taurasi
    This is pretty amazing, and a learning experience, I guess. This was misbehaving last night–not performing at all well. I popped the cork for a friend who thinks that all southern Italian wines are “burnt.” And this one lived up to his negative expectations, believe me! Well, overnight has wrought marvelous changes in this wine. First pour, the “burnt” quality had already backed off to a graphite-prune quality reminding me a little of Amarone. As we nursed it over the next hour or so, the changes just kept coming, until the nose had a bevy of high florals, like violets and citrus zest, over a core of concentrated blackberry, and a haunting background earthiness. The mid palate became almost explosive of super-ripe dark fruit, with an autumn-leaf overlay, and, although the tannins are pretty much shutting down the finish now, I expect great things. The color, after all, is almost purple. This is a baby giant. By the second day, in other words, this became a wine deserving real contemplation. With more time, it may become truly great.

    QOTD: This summer I had a 2001 Truchard Zin. On Day One it was fruity but in an aged, oxidized, “brown” frame. Day 2, the oxidized flavor was gone, it was thick, dense, raspberry syrupy without the sweetness. Amazing difference.

    Good show. Nice to see a day older taste. I have wine all the time days later. and really taste and smell a difference. Mostly with reds – better!

    Good point about each day – YOU are different (and me) so tasting the wines can be received differently. Very good, Gary! loved that learned lesson.

    The best “day later” wine: Walnut Crest Cab Sauv. South America. Amazing how much it changed and tasted better – in a decanter! try it. 48 hours later, it is real differnt.

    QOTD: I had a 2006 Razors Edge Syrah-Grenache blend. Upon opening it, it was ok. A bit typical, a bit fake, etc. Not terribly harsh alcohol, but – meh.

    Three days later after sitting in the bottle it was much more pleasant. Still not the best, but not bad at all.

    Please don’t change the beginning. You’re “Hello Everybody” makes me smile everytime.

    Nice concept of the 2nd day wines. Tons of your viewers do the two day experience. Hecl, you can even re-cork some and see how they stand in a week, ie: the Sassicaia.

Your intro Gary, and please, do give this specific comment a shout-out, is like the Tonight Show’s music just before Johnny Carson came out… no one will ever forget it and it is like your intro, I get chills.     QOTD: Some big zins like Chiarello Zin—tasted as fresh the 2nd day, but didn’t notice any other complexities. Many reds have evolved with a 2nd layer of flavors I wasn’t able to pick up on the first day.

    QOTD: I’ll limit my answer to wines in recent memory because I’m too tired to bring up my older tasting notes and dig back. The 2004 Sella Coste della Sesia Orbello, which is 50% Barbera, 25% Nebbiolo, 20% Cabernet Franc, and 5% Vespolina. Very interesting on both days, but also completely different. On opening the bottle, I immediately poured half the bottle into a 375 ml bottle, stuck a cork in it, and put it in my wine fridge and saved it for day 2.

    The 06 Pinots from Oregon have, as a whole, made the most dramatic changes over night that I have ever experienced in a wine. This is on the possitive side. I have had plenty of wines that were good on night one, turn into strait crap the following day.

    I have secretly been waiting for an episode like this, i wanted to see how much change a wine undergoes from the perspective of a trained palate. Not that i want to generalize what all wines will do, but just an example that a wine can change smell drastically and flavour minimally. interesting to know.

    QOTD: I’ve only recently started airing out wines, but i have to say what i have noticed is that the cheap wines really open up a lot. much more so that i would have expected. it is definitely a good way to make a cheap (and otherwise less desireable) wine servable.

    QOTD: not sure if this is the most dramatic change but this happened recently and it surprised me … had a bottle of Ercavio red from 2004 and this was really nice right after popping, the grape jelly element that sometimes bugs me with this wine had mellowed and it was a really nice drink, but the next day after just having the cork put back in and being in the frig it had totally fallen apart, yuck. I guess it should not be too much of a surprise as this is not really a wine to age much but it was a really great lesson.

    L’Aventure Optimus – a highly allocated wine, tough to get and in high demand. She runs about fifty bucks a bottle. We popped, decanted, waited an hour then sipped. The wine was so pedestrian. Lots of fruit and then…..zero finish. So we gave up. My buddy and I came back to it the next day. It was RIPPING GOOD!!! The fruit was amplified and the tannins were tearing my mouth to pieces. I learned a lesson that day. I LOVE seeing what wine does just a day later.

    QOTD: The other day, I had a 2004 joseph drouhin Morey St. Denis clos sorbe. The first day it smelled like straight up pickle juice and sauerkraut. Very awkward on the midpalate and disjointed. 36 hours later, the sourness blew off, and it started to reveal some more eau de vie, red fruit, and cedar box notes. Kind of like that awkward chick in junior high that became a stunning beauty queen by the end of high school

    QOTD: I find that younger wines do this the most. Obviously, they evolve with more exposure to oxygen. Hence, I say decant younger wines to open up, and older wines for sediment. I opened a ‘06 R Wines Chris Ringland, Ebinezer, Shiraz 3 days ago while watching you taste Gigondas, tasted it evolve when you presented the contest winners, and today I’m finishing the bottle as you taste the 24hr. decant. Great wine on days 2 and 3!

    QOTD- 2005 Dom. De La Chanteleuserie Bourgueil – smelled like Scotts Turf Builder and very sharp tannins when first opened. The second day all that went away and the tannins rounded enough to really enjoy the wine. It was like a miracle!

    Earlier this year I had a 2005 Santa Carolina cab. A couple of hours after opening it, it was bitter and weird tasting. The next day it tasted pretty good.

    Two days ago I opened a bottle of 2003 Barolo Rivata. I wasn’t getting much the day I opened it. By the next day (yesterday) it had completely changed. On both the nose and the palate I got a heavy dose of bug spray – some serious Raid® action.

And stop telling us how Parker and the Spectactor and Tanzer scored wines. You know as well as anyone that points are meaningless — they’re the equivalent of checking the score of a Jets game in the 13th minute of the second quarter and saying that’s the whole game. (And while you’re at it, scrub all the points from the Wine Library’s sales promotions. Using points to create a quality-price ratio — a QPR — is misleading.) If you want us to actually trust our own palates, then let us trust them! We don’t need no stinkin’ points!

    QOTD: My wedding night my wife and I arrived at our suite in our hotel room to find a chilled 1995 La grande dame Veuve C. We had already consumed quite a bit of wine so after enjoying 3/4 of the bottle (which was amazing, but anything would have been that night), we just left the rest on the counter. In the morning, we consumed the rest with some breakfast. The wine had lost a little sparkle but it had developed this incredible tangerine citrus quality that I had not tasted (or remembered) the night before. Thanks for the show!!

    Easy questions. 2000 Peterlongo 100% Tanat from Brazil. Did a pop and pour and it was so tanic it was hardly drinkable – maybe a 75. Poured something else, and left it to decant 24+ hours. Opened up to be a perfectly tasty wine in the 85-87 range. I grabbed another bottle, and we’ll definitely try that experiment again.

    I watched “Mondovino” yesterday, fascinating movie if people are interested in documentaries about wine. A bit…depressing in it’s way, and it requires a certain amount of wine knowledge, very little about wine is explained.

    QOTD: It was a Bordeaux, Chateau Something or Other, can’t recall, but day 1, it tasted rather like clay, it was austere, but nice. Day 2, it smelled like rotten garbage, and tasted like rotten garbage with sour cherries on top. It was brutal, and not much better with food. Day 3, I had to dump the rest into the sink. My gag reflex was kicking in, and it didn’t seem worth it to me! So, I opened a bottle Gigondas, and enjoyed myself immensely!

    I was recently blown away by day two of a bottle of Tantara 2005 Santa Maria Valley Pinot Noir.
    Initially the wine had a tight cherry cough drop thing going on… but in the back end and not a ton of fruit up front. The next day, wham! rhubarb, all spice, cedar, red plum, softer tannins and a more assertive fruit. It was like the difference between Adrian in Rocky and Rocky II.

Yesterday the Penfolds Grange decanter was the one with the more hour glass figure (?) and today it’s the one with the bundt-pan like bottom. Sorry. But I was so interested in remembering what you said yesterday that I went back to watch that one as well… so it’s really a good thing?

    Totally digging the show though. Cool experiment.

    QOTD: A lot of Australian shiraz change considerably for the better after a day. Young Eileen Hardy, Kay’s Amory, Clarendon Hills, and yes, Grange, are less monolithic and less oaky after air time. Or simply wait 8-12 years, if you can.

    AJ was born in ‘87, which was a great year for Cal-cabs. Opened an ‘87 La Jota Howell Mountain last night. At 21 years, it’s getting close to its due date.

    thanks for the scoring explanation. I’m wondering…would our friend from Oaktown remain if you were to age the wine for 5-10 years?

    I appreciate how malleable you are with the show: always changing this, trying that, and keeping it fresh.

    I don’t know where scratch and sniff technology is at these days, but it would be really cool if somehow you could send out some wine scratch and sniffs…or a variety of flavor profiles to be sniffed in combination to equal what you’re smelling. You would tell us, “ok, smell the cranberry, then the chocolate, and some cassis, that’s what this smells like!”

    QOTD: 2003 Vin De Table Du Vaucluse White imported by Kermit Lynch
    Initially, it had good structure and many components I enjoy in a French white: slighty astringent, pleasant minerality, but the flavor was a bit fuzzy. Retrieved it from the fridge the next day, and somehow it was much more focused and enjoyable. It was almost a completely different wine.

    WEIRD – Gary, I was doing EXACTLY the same thing with Pol Roger 1999 Champagne! I opened a bottle last night and thought it was a bit young, very zesty fruit and a bit bitter with a lot of lemon and lime pith flavours and I didn’t finish it.

    Then trying it tonight after being open for 24 hours, it has lemon marmalade aromas, and it is a bit like an older champagne on the palate with rich biscuit flavours coming through but still a bit thin on fruit. It still has the bubbles too, not a vibrant as yesterday, but more attractive.

    Love the show but can’t help you with He-Man toys. I traded all mine for original Star Wars toys in the late eighties. Still have them too!

    Actually I had the opposite experience…I had opened a bottle of Cab Sauv from a finger lakes winery, Miles, and let it breathe in the bottle for about three hours…I was very dissapointed with the results….since I had bought a second bottle, I popped and poured so to speak and really enjoyed it.Maybe every wine is not meant to be de-canted….

    Gary, if you want to avoid looking to your right all the time to keep checking up on uStream, why not change around the setup so the camera you use to tape the show is right alongside your computer. That would also solve the problem that if your computer’s webcam is streaming the show on uStream, it’s recording only the side of your head.

    This way, you could peek over at your monitor while still almost looking directly at your main camera.

    Good question Of the day…I can’t be VERY specific, but I’ve had some bordeaux that was Very very tight on the nose and the palate and after a day It was a WHOLE new wine.. like 20 Dollar bottles.. Nothing Super expensive.. Some (i know I am being too vague here) Italian wines open up a lot after 24 hours.. Hmm.. I’ll try to be more specific next time.

    I think it would be Carina Cellars, Clairvoyant. It was weird, when we tasted it it was pleasant but after popping it at home it was off balance and sour. The next day though it settled down and was more like it was when we tasted it. I wouldn’t have even thought to let it sit for a day though had it not been for wl.tv!

    GARY! Love the show, it was a great episode. I agree with Rob Howells up there in the comments. Hulu doesn’t allow us Canadians to sign up, or even watch the videos. Maybes a little shout out to the fans up north and make a contest for us eh?

    My cousin definitely has a Stinkor action figure in his room! It’s not all vintage and still in the package, it’s pretty well loved actually. But it’s there!

    QOTD – I will give you both angles, good and bad.

    Best turn around – I believe it was a Carmenere from Argentina, which was almost astringent at first and then settled down nicely on day 2.

    Worst – any of the Cab Francs from the Loire Valley. I find them appalling the next day – almost sour.

    QOTD: Actually I think I’ll mention a wine that the G man himself had on the show… and COMPLETELY bashed. The 2006 Falesco Sangiovese. The first day I had it, it was very similar to the way Big G described it when it was popped and poured on the show: kind of thin, unbalanced with a lack of fruit and just too much sulfer/septic notes on the nose, kind of garbage-esque. The next day, however, the fruit came out! Some sweeter earth notes, sour/black cherry, and the acidity was somehow more balanced with the tannins and general palate weight. Not amazing on the second day (definitely not a 90 pointer as Jay Miller rated it) but 83 on day 1 to 88 on day 2 – I think so… maybe 87.

    I don’t think I’ve had the opportunity to actually try a wine a day later as an experiment, I recall I tasted from the bottle at a party at my house once and only to see if it was still good -a Chateau dela Chaize- but it wasn’t, it ran flat but was very aromatic still, maybe even more so… but again, this was a casual on time thing the day after to clean the house, I guess it may have been less than 24 hours but you get the idea.

Your nose descriptions are hilarious…but interestingly enough I still get ya somehow… I just wanted to let you know that you can’t stop saying your “HELLO EVERYBODY”!! At least not just yet!! I started watching your show like a month ago and the first time I saw you saying it I was like “Geez! That is one enthusiastic, loud, and happy guy…Is he on anphetamines or what???” So everytime I watch your show I always wonder if you are going to be that enthusiastic,loud,and happy. And you always are!! Love it!

    QOTD: I accidentally left a half bottle of Wilhelm Bergmann Auslese out over night and forgot about it until around 5 the next day. After chilling for an hour it tasted so much sweeter than the original taste. I was quite surprised.

    Good show. The two wines are definitely way out of my price range right now!

    QOTD: The only wine that I can possibly begin to answer this question with is Smoking Loon Cabernet Sauvignon. It was not all that great to begin with, and it lightened up on the alcohol after the day or so (I forget how long it actually was between the tastings). Overall, a meh wine at best both times.

    I really enjoy the decanting shows! Actually, it would be neat to do every wine the next day too. Just leave them all open for 24 and give them a quick shot to see how they hold up.

    QOTD: I’ve had a couple of sangiovese based wines go to crap the next day, but the best improvement came from an inexpensive Cotes du Luberon that bumped ~8 points to an 89+ (for less that $10 retail!)

    Interesting show. I think the differences with long decanting, especially with “serious” wines, can be profound over time. But, dude, you are seriously weird! ;-)

    QOTD: About 5 years ago, we had a bottle of a 1990 cheap ass red Burgundy that was about a 80 point wine and I accidentally left it open for about a day and a half. I was going to throw it out but decided to taste it first and it was really good – lots of licorice and strawberries and some tobacco components. I would have scored it 88-89. It was dramatically better.

    Yeah, mix up the intro. You can always come back to it later. He-man! Nice, skunkor, awesome.
    Had a bottle of Galante Red Rose Hill Cab that at first was just so-so but over the next week it kept getting better and better. There are no rules and who says you can’t enjoy a wine a few days later. I like to open a few bottles and try a glass a day until they’re all gone. It’s amazing how much some change for the better or worse with just time.

    A few months ago I was at Target, and got a cheap Cab Franc/Carmenere blend by (oops). I opened it after getting off work, and it was completely undrinkable. Way too much oak. If I want that much oak in my grill, I’ll drink a good bourbon. So, as an experement, I poured it into my decanter for 24 hours, and the next night after work, it was fantastic. Crazy how that works.

    By far the most dramatic change I’ve seen is in the Anabella Cab. I opened it and hated it, it was all fruity and sugarfied. About three hours later it had opened up and become quite refined. It even had some nice vegetal components.

    What is the deal with wine reviews and wild boar?? Why is it that so many reviews for cabernet state that it would go great with wild boar? How many people have ever had wild boar? How often do you ever see wild boar offered on a menu or behind the meat counter at your local butcher shop? Who started this trend and why do wine reviewers seem to think that so many people out there eat wild boar on a regular basis and might choose to pair the wine in question with their next meal?

    QOTD: Clarendon Cellars Old Vine Grenache (not $100 retail, but north of $100 in a restaurant).

    QOTD biggest overnight improvement for me was root 1: cabernet sauvignon 2006 i think… it was really the first time i’d noticed a huge improvement and really got me hooked on trying leaving a little to try the next day. I’m sure it was mostly just the tannins breaking down so i could taste the fruit or whatever but it was big improvement. thank you very much gary for inspiring those sorts of experiments!

Bought it cause I turned 30 in 08 and the next day it opened up (to me) a little more. It was still awesome awesome stuff. God I could drink port every day.
