Yo…yo…yo…GV….I have tasted a lot of wines from the LONE STAR STATE, and have yet to be impressed…I think they are making good strides in their technique, but not up to snuff in my book! Anyways…CHEESE all the WAY!!! Big fat….angus…BURGER….medium RARE….topped….with GARGONZOLA!!!! Bruhaha!! Top it off with a little Andrew Murray SYRAH…baddaboom!! Aqua..man…I dig!

As for the Barolo!! Being italian…I feel proud that we can still go the rounds like Rockie when he faced the Russian DRAGO and just kept taking the hits and still stood his ground!! BRAVO ITALIANO!! Vive VINO ITALIA Sempre!!

Thanks for the extra segment. I’m sorry to say that I killed a young Brunello last week by decanting it for far too long. The massive tannins were silky at the start, but seemed to be hiding most of the fruit and spice, so despite the fact that it was delicious with cheese, I decanted until all I had was bitter mess. Of course, the very same approach has worked magic on other young monsters. I guess it’s just hard to tell sometimes.
