Gary, I have to say that the best part of watching this show is the Vayner-isms. Today it was: “taking the steam out of my sail”. I think you should start keeping track. There are plenty of them I am sure. Another favorite: “We did the did”.

I’ve had Cahors quite a bit, it does take a while to mellow out but when it does, man is it good. Also with the color, it’s widely known in France as “black wine” because of how dark it is, you always get some great color out of it.
