The brown cheese has brought me out of Lurkerdom. My wife is from Norway and loves that stuff. If you like it Gary you should try the real thing – 100% goats milk.

The reason it tastes like caramel is because it is. They boil the milk until the sugar caramelizes then they make it in to delicious brown blocks.
