  • Thanks for this episode–right up my alley since I’ve been on a kick for Italian whites (other than pinot grigio) this summer: Falanghina, Greco de Tufo, Soave, Arneis, Verdicchio, Tocai Friulano, Vermentino — there’s a whole world out there.

    QOTD – When you say “chicken” and then say “apples,” I start to think about how to cook them to pair them up with a that Falanghina. (Maybe roasted together with some walnuts. Man, I’m starting to think all my taste is in my mouth.)

    As for the wine, I love hearing about white wines from different regions. I have been on such a white wine kick as of late. So a wine bringing the thunder for under 15 bones!! Awesome. Now, if I could just find something like there in TN.

    The behind the scenes investigation of the Chicken & Apple mystery (“Chapple-Gate”)was great.

    QOTD: Take apples (sliced or quartered) add cinnamon stick, quartered onion into microwavable safe bowl/measureing cup covered with water. Zap on high for 5 minutes. Stuff steeped apple/onion/cinnamon mixture into chicken cavity along with fresh sage, rosemary, and thyme. Pull skin away from chicken breast but leave on (this gets it crispy while it roasts) coat with canola oil, kosher salt and black pepper. Instead of a rack, place chicken on “veggie-rack” of whole celery and carrot laid out on roasting pan. Roast the chicken and the steeped apples, onions, etc, will steam from the inside out, imbueing the chicken with their aromatic goodness, and helping keep the chicken juicy. You can also put some chicken/vegetable stock in the bottom of the pan with the “veggie-rack” which will mix with the drippings, cooking and seasoning the veggies.

    Cook up a starch of choice, pop a bottle of your favorite wine, and enjoy.

    This is my first time posting, I am a new comer to WLTV and a fellow dirty jerseyian. I have been around for the last 50-60 episodes.

    Chicken – Automatically I think of my fiance, who seems to eat chicken and nothing but chicken.

    Apples – My father makes a fantastic baked apple in the fall with raisins and brown sugar. Combined with a nice pork chop it is the best.

    I guess for me food and family just go together.
